Zesty Spanish Nachos Recipe


1 medium-sized bag tortilla chips  
4 ounces cheddar cheese, grated  
1 ounce Monterey jack cheese with jalapeno peppers, grated  
2 scallions, sliced

	
Heat the broiler.

Spread the tortilla chips on a baking sheet. Sprinkle the grated 
cheeses and the scallions evenly over the top. Broil for 2 to 3 
minutes, until the cheese has melted.

Serve immediately, with salsa or guacamole.

Spanish Rice Recipe


1-2 c. rice
fresh garlic
1/4 bell pepper
1/4 onion
butter
salt and pepper
1 can of chicken broth
1 8-oz can of tomato sauce

Brown rice in skillet with butter, garlic, pepper and onion.  
Once rice is golden brown, add chicken broth and tomato sauce.  
Cover and cook on medium heat until done.  You may need to add 
water or broth during cooking.... 

Spanish Rice & Beef Soup Recipe


Ingredients


1 pound beef cubed steaks 
2 tablespoons butter 
1 clove garlic, crushed 
1 package (6.8 ounces) Spanish rice mix 
1 can (14-1/2 ounces) chili-seasoned diced tomatoes, undrained 
fresh cilantro, chopped (optional) 

Directions

Cut Beef steaks lengthwise into 1-inch wide strips and then crosswise 
into 1 inch pieces.

In a Dutch oven, heat butter over medium-high heat until hot. Add 
beef and garlic; stir-fry 2 to 3 minutes or until outside surface of 
beef is no longer pink. (Do not overcook.) Remove from pan; season 
with 2 teaspoons seasoning from rice mix.

In same pan, combine rice mix and remaining seasoning, 5 cups water 
and tomatoes; bring to a boil. Reduce heat to medium-low; cover 
tightly and simmer 15 to 17 minutes or until rice is tender. Return 
beef; heat through. Stir in cilantro if desired.



TOMATOES SPANISH STYLE


Peel and slice 1 quart of tomatoes (or use one 3-lb. can). Remove 
seeds, and cut in small pieces 3 bell peppers; boil till tender 4 
onions; add tomatoes and peppers to onions, and simmer 1 hour; season 
with 2 level teaspoons salt and 1/2 teaspoon black pepper; cool, and 
keep on ice for several hours. Prepare two cups of stale bread 
crumbs; take 6 tablespoons of butter, lard or Wesson Snowdrift oil. 
Fill a baking dish with alternate layers of tomatoes and bread 
crumbs; moisten each layer with oil; cover top with bread crumbs, and 
bake in a slow oven for 1 hour. If desired, three tablespoons of 
sugar may be added to the mixture while it is cooking the first time.

Spanish Chicken Recipe

Ingredients:
1 3-4 lb whole chicken
1 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1/2 tsp garlic powder
1 6-oz. can tomato paste
1/2 cup beer
1 3-oz. jar stuffed olives with liquid

Directions:
Place the chicken in the stoneware. Season with salt, pepper, paprika and
garlic. Mix tomato paste and beer together and pour over chicken. Add
olives.
Cover cook on Low 8 to 10 hours or on High 4 to 5 hours. Serve over rice or
noodles.


Spanish Delight Recipe


Ingredients

1 lb. ground chuck 1 bell pepper, chopped 
2 medium onions, chopped 1 tsp. garlic powder 
salt & pepper to taste 15 oz. can tomatoes 
5 oz. pkg. noodles, cooked 1/2 cup grated cheese 
1 tbs. Canola oil 

Preparation

Cook meat, bell pepper, & onion in 1 tbs. oil until meat is done. 
drain & add garlic powder, salt, & pepper. Stir in cooked noodles & 
tomatoes & mix well. Pour into a casserole dish & bake at 350° for 
15 minutes. Sprinkle grated cheese on top & continue baking until 
cheese is melted & bubbly.
