1 tablespoon red onion 1 tablespoon chopped/seeded jalepeno 1 tablespoon chopped fresh cilantro 1/2 teaspoon salt (or less, to taste) 2 Avocados 1/4 cup peeled/seeded/chopped tomato 1 teaspoon lime juice In a bowl or molcajete for you hard core mex cooks, combine and "smoosh up" the onion, jalepeno and cilantro.
Use as a top or as a topping.

COCOA NUT PUDDING.

Take about half a pound of finely grated cocoa nut; beat up to a cream
half a pound of fresh butter, add it to the cocoa nut, with half a
pound of white sugar, and six whites of eggs beaten to a froth; mix
the whole well together, and bake in a dish lined with a rich puff
paste.

ENGLISH WALNUT CAKE. MRS. MARY W. WHITMARSH.

One and one-half cups of sugar, one-half cup of butter, one-half cup

of water, one and one-half cups of flour, one-half cup of corn starch,

two teaspoons of baking powder, the whites of six eggs. Flavor with

lemon. Bake in layers.

FILLING.--Two cups of light brown sugar, one-half cup of water. Boil

until it threads, and stir in the whites of two eggs, beating until it

creams; them stir in one pound of English walnuts, chopped fine.
