Famous Recipe - Smoked Salmon Roll-Ups

Ingredients: 2 cups cooked short grain or sticky rice, cooled 2 tablespoons toasted sesame seeds 2 tablespoons rice vinegar 2 teaspoon sugar 1 teaspoon salt 1/4 cup mayonnaise or salad dressing 1/8 teaspoon cayenne pepper 4 10-inch spinach-flavored flour tortillas 2 3-ounce package thinly sliced, smoked salmon (lox-style) 1 medium avocado, halved, seeded, peeled, and sliced 1/2 of a medium cucumber, halved lengthwise, seeded and cut into thin sticks

Directions: 1. Combine rice and sesame seeds. Combine vinegar, sugar, and salt; stir to dissolve. Pour vinegar mixture over rice mixture; toss to coat. Set aside. 2. Stir together mayonnaise and cayenne; spread 1 tablespoon mayonnaise mixture over 1 tortilla. Spread 1/2 cup of the rice mixture on half of the tortilla; top with one-fourth each of the salmon, avocado, and cucumber. Carefully roll tortilla up tightly, starting at the filled side. Wrap in plastic wrap. Repeat with remaining tortillas, mayonnaise mixture, rice mixture, salmon, avocado, and cucumber. Chill at least 1, or up to 4 hours, before serving. 3. To serve, trim ends. Cut remaining roll crosswise into 1-inch-thick slices. If necessary, secure with toothpicks. Arrange on shredded lettuce, if desired. Makes 28 roll-ups.

MICROWAVE MARMALADE DRUMSTICKS

Serves 4

This recipe calls for a microwave-safe utensil. Do you know how to tell for sure if your utensil is suitable?

1. Place the utensil and a cup of water side by side in the microwave oven.

2. Turn the oven to the HIGH setting for 1 minute. If the dish is warm, then it is absorbing microwave energy. Do not use it in the microwave oven.

5 roaster drumsticks

2 tablespoons butter or margarine

3/4 cup finely chopped onion

1/2 cup orange marmalade (You can also use current jelly)

1/2 teaspoon curry powder

In 9-inch microwave-safe utensil, combine butter and onion. Cover; microwave at HIGH (100% power) 5 minutes. Blend in marmalade and curry powder; turn drumsticks in mixture. Place drumsticks with meatier portions toward outer edge of utensil; cover with wax paper. Microwave at MEDIUM-HIGH (70% power) 12 minutes per pound. Halfway through cooking time, turn chicken over, re-cover with wax paper and microwave remaining time.

Let stand, covered, 15 minutes.

Famous Recipe - Turkey Piccata Pasta

Ingredients: 3/4 pounds linguine 4 tablespoons unsalted butter 1/3 cup rinsed and drained bottled capers 3 tablespoons freshly squeezed lemon juice 2 cups bite-size roast turkey meat 1/2 cup fresh flat-leaf parsley leaves 1 tablespoon extra-virgin olive oil 1/2 cup freshly fine grated Parmigiano-Reggiano cheese Directions: 1. Bring to a 6-quart pot of salted water to a boil and cook linguine until al dente, about 8 minutes. 2. Meanwhile, melt butter in a large skillet over moderately high heat; add capers and cook, stirring, until fragrant, about 2 minutes. Add 1/2 cup pasta water and the juice to skillet; bring to a simmer. 3. Drain pasta and add to skillet with turkey; simmer, tossing together with tongs until turkey is heated through and pasta is coated with sauce, about 2 minutes. Remove pan from heat and stir in parsley and oil; salt and pepper to taste. Serve pasta sprinkled with cheese. Makes 4 servings.

WHITE PATTY CAKES
Cream one-third cup of butter with one cup of
sugar, add one-half cup of milk, one and three-quarter cups of flour
sifted twice with two and one-half level teaspoons of baking powder, and
flavor with a mixture of one-third teaspoon of lemon flavoring and
two-thirds teaspoon of vanilla flavoring.
Bake in little plain patty
pans and cover the top of each with white icing.
Garnish with two little
leaves cut from angelica and a bit of red candied cherry.

CHOCOLATE NUT CARAMELS

2 cups of granulated sugar,
1-1/2 cups of glucose (pure corn syrup),
2 cups of cream,
1 cup of butter,
3 or 4 squares of Baker's Chocolate,
1-1/2 cups of English walnut meats,
2 teaspoonfuls of vanilla extract.



Put the sugar, glucose, _one_ cup of the cream and the butter over the
fire; stir and cook until the mixture boils vigorously, then gradually
add the other cup of cream. Do not allow the mixture to stop boiling
while the cream is being added. Cook until the thermometer registers
250 deg. F., stirring gently--move the thermometer, to stir beneath
it--every four or five minutes. Without a thermometer boil until--when
tested by dropping a little in cold water--a hard ball may be formed in
the water. Remove from the fire, add the chocolate and nuts and beat
until the chocolate is melted; beat in the vanilla and turn into a
biscuit pan, nicely oiled or buttered, to make a sheet three-fourths an
inch thick. When nearly cold turn from the pan and cut into cubes.



Amish Macaroni Salad Recipe

CURRY-GLAZED BREAST

Serves 4

Curry powder is a blend of many spices, so you don't need to combine spices yourself. Indian Curry Powder is mild and Madras Curry Powder is quite hot.

1 whole roaster breast

2 tablespoons butter or margarine

1/4 cup honey

2 tablespoons Dijon mustard

2 teaspoons curry powder

1/4 teaspoon salt or to taste

Place breast bone side down on a microwave-safe roasting utensil.

Place butter in a 2-cup glass container; microwave at HIGH (100% power) 45 seconds. Stir in honey, mustard, curry powder and salt; brush mixture all over breast. Cover with wax paper; microwave at MEDIUM-HIGH (70% power) 12 minutes per pound. Baste breast and rotate utensil 3 or 4 times during cooking. Let stand, covered with wax paper, 15 minutes. Test for doneness after standing; juices should run clear with no hint of pink when breast is cut near bone.

1/2 pint Maitre d’Hotel Sauce—1 1/2d.

Total Cost—21/2 d.

Time—5 Minutes

Make the sauce by recipe given elsewhere, flavour nicely with lemon juice, pepper, and salt. Slice up the potatoes, and put them into it; simmer for five minutes, dish, and serve.

Cut up the white parts of a cold fowl, and mix it with mustard and
cress, and a lettuce chopped finely, and pour over a fine salad
mixture, composed of equal quantities of vinegar and the finest salad
oil, salt, mustard, and the yolks of hard boiled eggs, and the yolk
of one raw egg, mixed smoothly together; a little tarragon vinegar is
then added, and the mixture is poured over the salad; the whites of
the eggs are mixed, and serve to garnish the dish, arranged in small
heaps alternately with heaps of grated smoked beef; two or three hard
boiled eggs are cut up with the chicken in small pieces and mixed with
the salad; this is a delicate and refreshing _entree_; the appearance
of this salad may be varied by piling the fowl in the centre of the
dish, then pour over the salad mixture, and make a wall of any dressed
salad, laying the whites of the eggs (after the yolks have been
removed for the mixture), cut in rings on the top like a chain.
