The 151st edition of the Carnival of the Recipes is up for your dining pleasure. This week, participants were asked to submit recipes for special diets. Next week’s edition will be hosted by Slow Cooker Recipes with a theme to sweat over: It’s Too Hot to Cook (Crockpot and slow cooker recipes). Recipes can be submitted through Blog Carnival. Crockpot Streusel Cake Ingredients 1 (16 oz.) pound cake mix 1/4 cup each brown sugar, finely chopped nuts 1 tbsp. flour 1 tsp. cinnamon Directions Mix cake mix according to directions on pkg. Liberally grease and flour a 2-lb. coffee tin. Pour cake mix into coffee tin. Mix brown sugar, flour, nuts and cinnamon together. Sprinkle over top of cake mix. Place coffee tin in your slow cooker. Cover with several layers of paper towels. Cover slow cooker and cook on High for 3 - 4 hours.

Strawberry Fudge Balls

Yield: 48 Servings

8 oz Cream cheese; softened 6 oz Semisweet chocolate chips; m 3/4 c Vanilla wafer crumbs 1/4 c Strawberry preserves 1/2 c Toasted almonds; finely chop --or powdered sugar; sifted

Beat the cream cheese on medium speed with an electric mixer until fluffy. Add the melted chocolate, beating until smooth. Stir in the wafer crumbs and preserves; cover and refrigerate for 1 hour. Shape the mixture into 1-inch balla; roll in chopped almonds. Store in an airtight container in the refrigerator, or freeze for up to 2 months.

SPICY TURKEY NOODLE SOUP Low Sodium Makes 8 Servings 4 cans (14.5 ounces each) fat-free, reduced sodium chicken broth 1 Tablespoon Mrs. Dash Original Blend Seasoning 1 /2 package (6 ounces) no yolk egg noodles; 1 16 oz. packages frozen fiesta blend vegetables 1/4 pound cooked turkey meat, cut into 1/2 inch pieces 1 teaspoon hot pepper sauce 1/4 cup chopped fresh cilantro, optional Bring chicken broth to a boil in a large saucepan; reduce heat to medium. Add All-Purpose Original Blend and noodles. Cook for 8 minutes; reduce heat to low. Add vegetables, turkey meat, hot pepper sauce and cilantro. Simmer 5 minutes. "Beastmaster, The" Wild Animal Crackers Lions, and Tigers, and Bears...oh, my... they are just cookies silly! You will need: 1 cup whole oats 1 tbsp. yellow corn meal 3 tbsp. honey 2 tsp. finely chopped lemon zest 1/2 tsp. salt 1/2 tsp. cinnamon 1 1/4 cups all purpose flour 1/2 tsp. baking soda 1/2 cup softened unsalted butter 8-10 tbsp. buttermilk 1 leopard, for strength 1 hawk, for sight and 1 alligator, for some snappy new loafers Directions: 1. Preheat the oven to 375?F. 2. Grind oats and corn meal in a blender or coffee grinder until very fine. 3. Transfer to a mixing bowl and add the honey, chopped lemon zest, salt, cinnamon, flour, and baking soda. 4. Add the butter in pieces and cut into the mixture with a pastry blender or 2 knives. 5. Add the buttermilk and knead well to form smooth dough. 6. Roll as thinly as possible and cut with various animal-shaped cookie cutters. Transfer to an ungreased cookie sheet and bake 10-15 minutes, until light brown and subdued. 7. Reassure annoying animal rights activists it's o.k. to eat these animal crackers because no actual animals were harmed in the production of this dish. (But feel free to remind them that unless someone cheerfully volunteers to clean up, you can't guarantee the safety of any real animals in the area. Makes a whole herd
