Fruit Stuffed Pork Chops

1 can (16 ounces) pitted tart cherries, drained

1/2 cup chopped apple

1/4 cup raisins

1/4 cup chopped dried apricots

1 teaspoon ground cinnamon

1/2 teaspoon instant chicken bouillon granules

1/2 teaspoon salt

1/8 teaspoon ground allspice

1/8 teaspoon ground cloves

1/8 teaspoon pepper

5 tablespoons CRISCO Oil, divided

1/3 cup chopped onion

1 cup herb-seasoned stuffing mix

1/4 cup packed brown sugar

4 pork chops with pocket, 1 inch thick

Preheat oven to 350ºF. Mix cherries, apple, raisins, apricots, cinnamon, bouillon granules, salt, allspice, cloves and pepper in medium mixing bowl. Set aside.

Heat 1 tablespoon Crisco Oil in small saucepan. Add onion. Sauté over moderate heat until tender. Stir in stuffing mix, brown sugar and cherry mixture. Remove from heat.

Fill each chop pocket with one-fourth of stuffing. Secure edges with wooden picks. Heat remaining 4 tablespoons Crisco Oil in large skillet. Add chops. Brown over medium-high heat. Place chops in 8-inch square baking dish. Cover dish with aluminum foil. Bake at 350ºF, about 40 minutes, or until pork is no longer pink.

Remove wooden picks before serving.

Yield: Four

Butterfinger Angel Dessert

1 angel food cake 2 cups confectioners' sugar 1/2 cup butter 2 teaspoons vanilla extract 1 quart whipped cream

Break up angel food cake into pieces. With a mixer, mix confectioners' sugar, butter and vanilla extract. Fold in whipped cream. Put into a pan half of angel food cake and half of cream mixture over cake. Crush 5 or 6 Butterfinger candy bars. Sprinkle over cream mixture. Put rest of cake on. Add remaining cream mixture. Sprinkle remaining candy bar on top.

Rosemary Garlic Beef Rib Roast

6-8 lb well-trimmed Beef rib roast, small end (3 to 4 ribs)

Seasoning: 1 Tbsp dried rosemary leaves, crushed 3 cloves garlic, crushed 3/4 tsp salt 1/4 tsp pepper

Heat oven to 350º F. Combine seasoning ingredients; press evenly into surface of Beef roast. Place roast, fat side up, in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of Beef, not touching bone or resting in fat. Do not add water or cover. Roast 2-1/4 to 2-1/2 hours for medium-rare; 2-3/4 to 3 hours for medium doneness.

Remove roast when meat thermometer registers 135º F for medium-rare, 150º F for medium. Let stand 15 minutes. (Temperature will continue to rise to 145º F for medium-rare, 160º F for medium.) Carve into slices.

8 to 10 servings.

Fix and Freeze Swiss Steak

1 1/2 lb. beef round steak, cut 1/2" thick 2 T. oil 1 can tomatoes cut up (16 oz) 1 small onion, sliced 1 stalk celery, sliced 1 medium carrot, thinly sliced 2 T. cold water 1 T. cornstarch 1/2 t Worcestershire 3 cups hot cooked rice or noodles

Cut meat into 6 serving size pieces. Pound both sides of meat lightly to tenderize. In large skillet, brown half of the meat in 1 T. hot oil for 4 minutes. Turn once. Remove form skillet. Brown remaining meat in remaining oil. Drain off fat. Return all of the meat to the skillet. Stir in undrained tomatoes, onion, celery and carrot. Bring to boil. Reduce the heat. Cover. Simmer about 1 hour or until meat is tender. Stir together water, cornstarch and Worcestershire. Add to skillet. Cook and stir until thickened and bubbly, then cook and stir for 2 minutes more. Remove from the heat. Cool. Spoon into a 1 1/2 quart freezer container. Seal, label and freeze. To serve, transfer frozen mixture to medium pan. Cover and cook over medium low heat about 45 minutes or until heated through. Stir occasionally. Serve with cooked rice or noodles. In this case, "Swiss" is an old fashioned term for "tenderizing." Chocolate Truffle Cheesecake

1-1/2 cups chocolate wafer crumbs 2 tbl. sugar 1/4 cup butter or margarine, melted Filling: 1/4 cup semi-sweet chips 1/4 cup whipping cream 3 (8oz) pkg. cream cheese, softened 1 cup sugar 1/3 cup baking cocoa 3 eggs 1 tsp. vanilla extract Topping: 1-1/2 cups semi-sweet chips 1/4 cup whipping cream 1 tsp. vanilla extract Combine the cookie crumbs and sugar.  Stir in the butter.   Press on the bottom and up the sides (1-1/2") of a greased 9-inch springform pan.  Bake in a 350 degree oven for 10 minutes.  Cool.  Reduce the oven heat to 325 degrees.  Filling:  Melt the chips until smooth and remove from the heat and add the cream; mixing well.  Set aside.  Beat the cream cheese and sugar until smooth.  Add the cocoa and beat well.  Add the eggs and beat until just combined.  Stir in the vanilla and the melted chip mixture until just blended.  Pour over the crust.  Bake for 45-50 minutes or until the center is almost set. Topping:  Melt the chips until smooth. Remove from the heat and add in the cream and vanilla, mixing well.  Spread over the baked filling. Refrigerate overnight.  Carefully run a knife around the edges to loosen from the pan.  Garnish with whipped cream and candy kisses.

Salad 1 head red leaf lettuce 1 head romaine lettuce 6 ounces balsamic vinaigrette dressing 2 ounces shredded Parmesan cheese Cracked pepper to taste

Glazed Pecans 1 cup chopped pecans 1/4 cup dark brown sugar 1 tablespoon water

Strawberry Glaze 12 strawberries 1/4 cup balsamic vinegar 1/4 cup granulated sugar 2 tablespoons water

Mix chopped pecans with brown sugar and water and heat; set aside.

Slice strawberries into 1/4-inch slices.

Mix balsamic vinegar, sugar and water and coat strawberries; set aside.

Chop red leaf and romaine lettuce into 2-inch pieces. Toss lettuce, Parmesan cheese, balsamic vinaigrette and Glazed Pecans.

Strain strawberries from glaze and place on top of salad. Top with cracked pepper.

Yield: 2 salads

Boiled Cabbage Head of cabbage butter pepper chopped onion Take head of cabbage and cut it into 1/8, then cut the core out of each piece and completely cover with water. Salt to your taste . You can spice it up with a dried red pepper in the pot and boil until it is just tender and it still has it's color. Add plenty of real butter to the pot because it is the best flavor in the world. Serve as soon as you can. You don't want it to set very long because it will over cook. You can serve with skillet fried potatoes , Fried smoked ham (not country ham), and fresh corn bread. Skillet Fried Cabbage Cut head of cabbage into 1/8 take the core out and cut into bite size pc. Add 1 small onion, chopped. Add enough melted butter to cover the bottom of your skillet and stir while frying.(don't get in a hurry and burn it ) until it starts to brown around the edges. Add enough water to half cover the cabbage, cover and let simmer until tender. Fold in the butter, salt and pepper to taste. (DON'T OVERCOOK) if you have to much water, pour some off before you add your butter. Fried Cabbage Serves 8 1/2 lb. Bacon, diced 3 tbsp. Butter 1 small head cabbage, chopped salt and pepper to taste 1 onion, chopped 3 tbsp. sugar

Place bacon in a large, deep skillet. Cook over medium high heat until crisp. Stir in butter, cabbage, salt, pepper, sugar and onions. Cover skillet and steam for 15 to 20 minutes. Stir several times during the course of steaming. OLD FASHION COLD SLAW Back in the "good old days" they didn't have such a thing as mayonnaise so they would make slaw like the following method. Cabbage apple cider vinegar sugar black pepper Cut the cabbage very fine (But not to fine) with a really sharp knife or you can use a food processor and cut cabbage Apple cider vinegar should be cut water, about 1 part water to 1 part vinegar. For each Cup of cut cabbage use 3 tbsps. vinegar , 2 tbsps. sugar and 1/4 tsp. black pepper. Let each person salt their own slaw when they eat it. If you salt the slaw when you make it, it will bleed all the water out and it will not be crisp. Mix and taste for seasonings. Refrigerate in air tight container . It will last for several days. Scalloped Cabbage Yield: 6 servings 1 lrg (3 lb.) cabbage, shred 1 1/4 tsps salt, divided 2 cups boiling water 2 tbsps butter 2 tbsps flour 1 cup milk 1/2 cup shredded Cheddar cheese 3 tbsps saltine cracker crumbs (opt)

Cook cabbage and 1 teaspoon salt in 2 cups boiling water 8 minutes. Remove from heat, and drain. Place cabbage in a lightly greased 2-quart baking dish. Melt butter in a small saucepan over medium-high heat; whisk in flour. Slowly whisk in milk until smooth. Remove from heat, and whisk in remaining 1/4 tsp. salt and cheese, whisking until cheese is melted. Pour cheese mixture evenly over cabbage. Sprinkle evenly with crushed crackers, if desired. Bake, uncovered, at 350 degrees F for 30 minutes or until bubbly. Cabbage Sauté Serves 8 1 med. onion, chop 2 tbsps butter 4 carrots, thin slice 6 cups chopped cabbage 1/2 cup chicken broth 1 tsp salt 1 tsp sugar

In a large skillet, sauté onion in butter, until tender. Add carrots and cook and stir for 2 to 3 minutes. Stir in the remaining ingredients; bring to boil. Reduce heat, cover and simmer for 5 to 7 minutes or until vegetables are tender. Serve with a slotted spoon. Cabbage Casserole 1 med. cabbage, shred 1 12 oz. pkg cheddar cheese toasted buttered bread crumbs Sauce:

4 tbsps. butter 4 tbsps. flour 2 cups milk

Boil cabbage in water until tender. Melt butter in a saucepan. Stir in flour. Slowly add in milk and stir well. Cook sauce over low heat until thick. Layer 1/2 cabbage in large casserole dish. Add 1/2 of sauce, salt and pepper. Add layer of cheese. Start over with another layer of cabbage, sauce and cheese. Top with toasted bread crumbs. Bake for 30 to 40 min. at 350 degrees F. Roasted Cabbage The cabbage is a little browned on the outside and has a very nice, pleasing flavor. 1 lrg. cabbage, wash 1/2 cup butter or lard 3 cups water seasonings to taste Put all ingredients in a baking pan. Bake in moderate (350 degrees F) oven for 55 minutes, basting frequently. Serve. Whole Stuffed Cabbage 1 whole cabbage 3 lbs. bulk sausage, mild or hot water Boil the cabbage whole in salted water for about 8 minutes. Then run cold water over it. Separate each cabbage leaf from the core. Spread some sausage meat on each leaf. Place the leaves on top of each other, forming into the original cabbage. Place in a towel and press tightly into a round form. Tie the top of the towel with a string. Boil (towel and cabbage) in salted water for about 1 1/2 hours. Untie the towel and serve the cabbage on a round dish. Cabbage with Ham Melt 1 tbsp. of butter and when hot, add 3 pints white cabbage, shaved fine. Cover tightly and simmer until the cabbage turns yellow. Sprinkle with 1 tsp. salt, a few grains cayenne, and 1 cup minced cold boiled ham. Add 1/4 cup white wine vinegar, stir well, cover and cook slowly for 2 hours. Remove from stove and serve from pot. Creamed Cabbage 1 pint boiled and minced cabbage 1/2 pint hot milk 1 tbsp butter 1 tsp flour 1/2 tsp. salt 1/2 tsp. pepper Put the cabbage, hot milk, salt and pepper in a saucepan. Beat the butter and flour together until creamy and stir into mixture in the saucepan. Simmer 10 minutes until the raw taste of the flour is gone. Be careful not to scorch the sauce. Serve very hot. CABBAGE SOUP 2 lbs. beef soup bones 1 c. chopped onion 3 carrots, chop 2 cloves garlic, mince 1 bay leaf 2 lbs. beef short ribs 1 tsp. thyme 1/2 tsp. paprika 8 c. water 8 c. chopped cabbage 2 cans tomatoes 2 tsp. salt 1/2 - 3/4 tsp. Tabasco sauce 1/4 c. chopped parsley 3 tbsp. lemon juice 3 tbsp. sugar 1 lb. can sauerkraut

Place beef bones, onion, carrots, garlic and bay leaf in roasting pan. Top with short ribs; sprinkle with thyme and remaining ingredients. Cook over medium heat. 24 Hour Cabbage Slaw 1 lrg Head cabbage 1 Onion 1 Carrot 1 cup Salad oil 1 cup Vinegar 1 cup Sugar 1 tsp Salt 1 tsp Celery seed 1 tsp Dry mustard 1 tbsp Sugar Shred cabbage, onion, and carrot fine. In a bowl, alternate layers of cabbage, onion, and carrot. Cover with 1 cup sugar. Bring to a rolling boil, vinegar, salad oil, celery seed, dry mustard, salt, and sugar. Pour rapidly boiling mixture over cabbage very slowly. Refrigerate for 24 hours. You might also add green bell pepper and/or a rib of celery, thinly sliced. When ready to serve, stir well. This keeps well and gets better each day. "Bavarian" Cabbage 1 lrg Onion; coarse chop 2 tbsps Butter or margarine 1 med Cabbage head - (2 lbs) coarse shred 1 7 oz. can Spam luncheon meat, dice 1/2 cup Water 1/2 tsp Caraway seeds 1/2 tsp Salt 1/8 tsp black pepper 2 tbsps Vinegar 2 tsps Sugar In large saucepan, saute onion in butter until golden brown, stirring often. Add cabbage, Spam, water, caraway seeds, salt, and pepper. Bring to a boil; cover and simmer 10 minutes. Stir in vinegar and sugar; mix well. Beef Stuffed Cabbage Rolls 1 lb ground Beef 1/3 cup reg., uncooked Rice 1 Egg; beaten 1 1/2 tsps. Salt 1/8 tsp. Pepper 6 lrg Cabbage leaves 1 med Onion; thin slice 2 tbsps. Butter (or marg.); melted 1 10 3/4 oz can tomato soup; undiluted 1 1/4 cups Water 1/2 cup Celery; chop 1 tsp. fresh Parsley, mince 3 tbsps. Lemon juice 1 tsp. Sugar 1 tsp. Salt 1/8 tsp. Pepper Combine ground beef, rice, egg, 1-1/2 tsps. salt, and 1/8 tsp. pepper; stir well. Cook cabbage leaves in boiling walted water 5 to 8 minutes or until just tender; drain. Place equal portions of meat mixture in center of each cabbage leaf; fold ends over, and fasten with wooden pick. Saute onion in butter in a large skillet until tender but not brown. Add tomato soup and remaining ingredients, stirring well; simmer 10 minutes. Place cabbage rolls in the tomato mixture; cover and simmer 1 1/2 to 2 hours.

Cream of Carrot Soup The base of the soup can actually be made a few days ahead and frozen until the day needed.

2 cup carrots, sliced 1 large onion, sliced 3 large garlic cloves, minced 4 cups chicken broth 1 teaspoon salt Pinch cayenne pepper 1/2 cup cooked rice Additional chicken broth if needed 1/2 cup dry Sherry or white wine (optional) 1 cup whipping cream or evaporated milk

Peel and cut the carrots, onions and garlic in small pieces. Put carrots, onion, garlic and 1 cup broth in saucepan. Bring to a boil. Simmer uncovered for 15 minutes, cover and simmer 15 more minutes.

Place in blender or bowl of food processor, with the salt, pepper and rice. Blend until smooth, adding more broth if the paste is too thick. At this point it can be saved in the refrigerator until later or even frozen until needed.

Thaw the purée if needed. Blend in remaining broth and add sherry. If you opt to not use Sherry or wine, you may add more broth. Return to pan, heat until just boiling. Add cream just before serving. Do not boil. Give it a few turns of freshly coarsely ground peppercorns.

YIELD: 8 servings

1 lb. processed cheese food - cubed 1/2 cup milk - low-fat okay 1/2 tsp. cayenne pepper 1/2 tsp. paprika 1 lobster tail - broiled 1/4 lb. crawfish tail meat - broiled 1/2 cup chopped red bell pepper 2 Tbsp. fresh minced parsley

Combine all ingredients except red pepper and parsley in a saucepan.

Heat on medium-low heat, stirring constantly, until cheese has melted.

When ready to serve, garnish with red bell pepper and parsley.

Dip torn pieces of French or Italian bread in fondue.

1/2 (16 ounce) package Japanese-style tofu 1 pound ground chuck 1 egg 1/4 cup soy sauce 1/2 cup soft bread crumbs 1/2 teaspoon marjoram 1/2 teaspoon rubbed sage 1/4 cup chopped scallion Soy-Mushroom Sauce

Mix all ingredients except Soy-Mushroom Sauce in bowl. Form into dome-shaped loaf in 8- or 9-inch pie plate. Spoon a little Soy-Mushroom Sauce over loaf. Bake at 350 degrees F 1 hour, glazing loaf with a little additional Sauce after 1/2 hour.

Transfer baked loaf to serving plate. Pour remaining Sauce over top. Cut into wedges to serve.

Makes 4 servings.

Soy-Mushroom Sauce Combine 1 (3 ounce) can sliced mushrooms (undrained), 2 teaspoons cornstarch, 1 tablespoon brown sugar and 2 tablespoons soy sauce in saucepan. Cook, stirring until mixture comes to boil and is thickened.

Don Pablo's Tortilla Soup 2 (14 1/2 ounce) cans chicken broth 1 cup mild salsa 1 cup dried tomato halves, snipped into thin strips 1 teaspoon ground cumin 1/4 cup chopped cilantro 2 tablespoons lime juice 2 cups broken tortilla chips 1 (7 ounce) can corn kernels 1 small avocado, peeled, seeded and cut into 1/2-inch dice 1/2 cup shredded Monterey jack cheese

In 2-quart saucepan, mix broth, salsa, dried tomatoes and cumin. Bring to a boil, reduce heat and simmer gently, 8 to 10 minutes, until dried tomatoes are tender. Mix in 2 tablespoons. of the cilantro and the lime juice. Ladle hot soup into four bowls, dividing equally. Divide the remaining cilantro, the tortilla chips, corn, avocado and cheese among four bowls. You can also add a little sour cream to the individual bowls.

1 cup tomatoes, 1/4 inch diced 1/2 cup red onion, 1/4 inch diced 1/8 cup cilantro, leaves only, roughly chopped Jalapeño pepper, finely minced, to taste 1/2 teaspoon salt 1/4 teaspoon black pepper 1 teaspoon salad oil 1 teaspoon white vinegar 1/4 teaspoon granulated garlic

After washing vegetables, dice/chop/mince and place in steel or glass bowl. Add seasonings, oil and vinegar and gently mix. Do not over-mix as this will bruise the tomatoes.

Store leftover pico de gallo in the refrigerator to add to your favorite dishes and salads, or serve with chips for up to 36 hours.

8 skinless, boneless chicken breasts 1 (8 ounce or larger) package Monterey jack cheese, 1/2 cup butter, melted 1 cup Italian seasoned bread crumbs 1 1/2 tablespoons grated Parmesan cheese 1/2 teaspoon salt 1/2 teaspoon ground cumin 1/2 teaspoon ground black pepper 1 small red bell pepper 1 small green bell pepper

Cut some of the cheese into 8 slices, and reserve part of it for the cheese sauce. Place 1 chicken breast between two sheets of wax paper. Working from the center to the edges pound with a meat mallet until flat and rectangular shaped. Repeat with remaining breasts. Wrap the flattened chicken breasts around cheese. Secure with wooden picks or uncooked spaghetti noodles.

Combine the bread crumbs, parmesan cheese, salt, cumin and pepper. Roll the secured chicken pieces in the melted butter and then in the bread crumb mixture. Place chicken breasts in a 13 x 9-inch baking dish, but don't crowd them. Drizzle the remaining butter over all eight of the breasts. Refrigerate for 1 hour or freeze to bake later (baking time will be increased by about 5 to 10 minutes).

Bake in a preheated 400 degree F (205 degree C) oven for 25 to 30 minutes or until chicken is done.

Make a roux with butter and flour. Add about 1 cup milk. Bring to a simmer. Add cheese and lower the heat, stirring constantly so cheese does not burn. Add milk as needed to thin out the cheese sauce. Dice bell peppers.

When chicken is done, pour some cheese sauce over top and sprinkle with diced peppers.

Yields 4 servings.

INGREDIENTS: 1 pound skinless, boneless chicken breast halves - cut into chunks 2 tablespoons white wine 2 tablespoons soy sauce 2 tablespoons sesame oil, divided 2 tablespoons cornstarch, dissolved in 2 tablespoons water 1 ounce hot chile paste 1 teaspoon distilled white vinegar 2 teaspoons brown sugar 4 green onions, chopped 1 tablespoon chopped garlic 1 (8 ounce) can water chestnuts 4 ounces chopped peanuts DIRECTIONS: 1. To Make Marinade: Combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil and 1 tablespoon cornstarch/water mixture and mix together. Place chicken pieces in a glass dish or bowl and add marinade. Toss to coat. Cover dish and place in refrigerator for about 30 minutes. 2. To Make Sauce: In a small bowl combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil, 1 tablespoon cornstarch/water mixture, chili paste, vinegar and sugar. Mix together and add green onion, garlic, water chestnuts and peanuts. In a medium skillet, heat sauce slowly until aromatic. 3. Meanwhile, remove chicken from marinade and saute in a large skillet until meat is white and juices run clear. When sauce is aromatic, add sauteed chicken to it and let simmer together until sauce thickens.

IHOP Buttermilk Pancakes

Ingredients: 1 1/4 C. Flour 1 1/2 tsp. Baking Powder 2 1/2 tsp. Sugar 1/2 tsp. Salt 1/2 tsp. Baking Soda 1/8 C. Vegetable Oil 1 Egg ( slightly beaten ) 1 1/2 C. Buttermilk ( 1/8 - 1/4 C more if needed to keep batter thinner )

Preparation:

Place first five ingredients into a bowl, add buttermilk, oil and egg. With a spoon mix all ingredients and beat until smooth. Heat a frying pan or a griddle. Fry pancake on medium low heat. To a hot pan or griddle pour a little oil or spray with a none stick vegetable oil.

Pour batter to a desired size. Let batter start to show small bubbles on top before you turn pancake over to finish cooking. Turning pancakes is made much easier if you spray your pancake turner with a none stick spray. The turner does not stick to the uncooked dough of pancake when you are turning them. If batter seams to be to thick add a little more buttermilk and mix well.

This recipe makes about nine 4" - 5" pancakes. Serve warm with your favorite syrup.

1 lb. bulk pork sausage 1/2 cup chopped onion 1 clove garlic, minced 1 can tomatoes, cut up (16 oz) 1 can tomato sauce (8 oz) 1 can tomato paste (6 oz) 2 t. dried basil, crushed 8 oz lasagna noodles (8 noodles) 2 beaten eggs 2 1/2 cup ricotta or drained cream style cottage cheese 3/4 cup grated Parmesan cheese 2 T. snipped parsley 1/2 t. pepper 12 oz. mozzarella cheese, thinly sliced

In large skillet, cook meat, onion and garlic until meat is brown and onion is tender. Drain off fat. Stir in tomatoes, tomato sauce, tomato paste and basil. Bring to boil. Reduce heat; cover and simmer for 15 minutes stirring often. Meanwhile, cook noodles as package directs. Drain. Rinse with cold water. Drain. In small bowl, stir together eggs, ricotta or cottage cheese, 1/2 cup of the Parmesan cheese, parsley and pepper. To assemble, arrange 1/4 of the noodles in the bottom of a greased 8 x 8 x 2" or a 12 x 7" baking dish. Trim noodles to fit. Spread ;with 1/4 of the ricotta mixture. Top with 1/4 of the mozzarella and 1/4 of the meat sauce. Repeat layers once. Sprinkle with half of the remaining Parmesan cheese. Assemble remaining ingredients in another greased 8 x 8 x 2" or 12 x 7" baking dish. Sprinkle with the remaining Parmesan cheese. Seal label and freeze. To serve, thaw lasagna overnight in the refrigerator. Bake covered at 375 for about 1 1/2 hours or until heated through. Let stand 5 minutes. Makes two 6 serving portions. Source: My Old Recipes

Better than Yankee Doodles

Makes 40 mini-cupcakes or 24 medium-sized cupcakes

2 lb. 3 oz. good-quality bittersweet chocolate 10 whole eggs 5 egg yolks 2 cups sugar

Chocolate glaze (optional): 1 cup heavy cream 16 oz. semisweet chocolate chips 4 oz. (1 stick) unsalted butter, cut into pieces

Melt the chocolate in the top of a double boiler over barely simmering water.

While the chocolate is melting, combine the whole eggs, yolks, and sugar in the bowl of an electric mixer. Using the balloon whisk attachment, beat on high speed until pale yellow in color and tripled in volume. With the machine running, add the melted chocolate and mix quickly. Turn off the machine and use a rubber spatula to scrape down the chocolate from the sides of the bowl. Fold in until the chocolate is evenly distributed.

Preheat the oven to 350 degrees F. Spray mini-muffin tins with nonstick vegetable cook spray or grease with oil. Spoon in the batter so the tins are three-fourths full. Bake for about 12 minutes, until the cupcakes have risen and the tops are cooked and cracking. Let cool to room temperature in the tins.

Remove the cupcakes carefully, tapping the tin on a counter to loosen them. Most of the cupcakes should lift out; use a paring knife or small metal spatula to nudge out any difficult ones.

To make the chocolate glaze, scald the cream in a 1-quart saucepan. Put the chocolate chips in a food processor and, with the motor running, pour the hot cream through the feed tube and mix until smooth. Add the butter, bit by bit, and blend in. The mixing process should be completed in only a couple of minutes. Remove the glaze to a small container and let cool. Hold each cupcake by its base and dip into the glaze in one motion.

Recipe notes: I place a dollop of whipped cream on these cupcakes and serve them on a little plate surrounded by chocolate sauce. The recipe can be doubled or tripled to make more or larger cupcakes. The cupcakes can be baked up to two days ahead and stored in a covered container in a cool place.

2 tablespoons canola oil 8 ounces 36-40 shrimp 7 baby carrots, halved lengthwise 1/2 cup water chestnut slices 20 to 24 snow peas (china peas) 1 large scallion - white part - 1/4-inch minced 1 large garlic clove, chopped fine 2 tablespoons sherry 1 tablespoon sambal chili paste ("Rooster" label) 1/4 teaspoon ground white pepper 2 teaspoon ground bean sauce Cilantro (for garnish) Cornstarch slurry (1 teaspoon cornstarch blended with 1 ounce water)

Sauce 2 tablespoons soy sauce 2 teaspoons granulated sugar 2 ounces water 2 teaspoons white vinegar

Assemble sauce ingredients and put aside.

Heat a large sauté pan, cast iron skillet, or electric wok until smoking. Add oil and baby carrots, sauté until the color of carrots brightens. Add shrimp and stir fry until about halfway cooked. Add water chestnuts, snow peas and garlic. Sauté briefly. Add scallions. Add chili paste, ground white pepper, ground bean sauce, when you smell the "nuttiness" of the ground bean sauce, reduce heat and add sherry. Introduce sauce mixture, let boil briefly. Add cornstarch slurry and stir until thickened (approximately 30 seconds). Servewith steamed rice on platter or in large bowl, garnish with cilantro.

6 oz. butter 6 oz. almond paste 6 whole eggs ½ cup lemon juice 3 egg yolks 2 lemons, zest 1 1/8 cup granulated sugar 1½ cup almond flour 2/3 cup cornstarch ½ pint fresh raspberries

Meringue for topping (optional):

1 large egg white ¼ cup granulated sugar Confectioner's sugar

Cream together butter and almond paste. Beat 2 yolks, lemon zest and juice.

In stainless steel mixing bowl, temper whole eggs with 1 yolk and sugar over hot water. Whisk with ballon whip on full speed to fill volume.

Add small amount of beaten eggs to almond paste mixture and fold in. Then fold remaining egg mixture, alternating with flour and cornstarch.

Pour into cake pan lined with parchment paper. Push in fresh raspberries. Bake in 350° oven for about 30 minutes until ready.

Remove from oven and let cool.

Make the meringue in mixing bowl: Beat egg white until it forms a soft peak and add sugar. Beat until glossy. Immediately spread the meringue and sprinkle with confectioner's sugar. Bake in 475° oven for 3 to 4 minutes to lightly brown.

1 sheet ready rolled shortcrust pastry
60g [ 2 1/2 oz ] Danish Blue Cheese, crumbled
3 eggs, lightly beaten
1 cup light sour cream
1x 410g [ 14 1/2 oz ] can halved pears in juice, drained
1/2 teaspoon cardamom
 
Line a 20cm [ 8 inch ] flan pan with the pastry.
Bake at 220c for 10 minutes
Blend together cheese, eggs and sour cream.
Roughly chop pears, retaining one piece for decoration.
Add chopped pear and cardamom to egg mixture and pour into pastry shell.
Slice remaining piece of pear and add to the top of the tart
Bake at 180c for 40 minutes or until firm.

16 ounces egg noodles 2 tablespoons canola oil, plus additional oil if needed 1 1/2 pounds thinly sliced beef tenderloin (filet mignon) 4 ounces sugar snap peas or snow peas 4 ounces bean sprouts 4 ounces white mushrooms, sliced 1 teaspoon sambal or sambal oelek 2 tablespoons fresh sweet basil, cut into thin strips 2 tablespoons fresh Thai basil. cut into thin strips 2 tablespoons oyster sauce 3 tablespoons soy sauce 1 to 2 tablespoons sambal or sambal oelek Optional garnish: Sprigs of fresh basil

Cook's note: Fresh noodles are best; if you can't find fresh, use dried. Sambal is a condiment sold in Asian markets and some supermarkets with large Asian specialty sections. Its most basic type is called sambal oelek, a mixture of chilies, brown sugar and salt. If you can't find Thai basil, use a total of 4 tablespoons fresh sweet basil.

If using dried noodles, bring large pot of water to boil on high heat. Add noodles and cook al dente according to package directions. Drain and set aside. If using fresh noodles, boil only 1 minute. Drain and set aside.

Heat wok on medium-high heat. Add oil and heat until almost smoking. Add beef and quickly brown, stirring occasionally. Reduce heat to medium. Add peas, sprouts, mushrooms and 1 teaspoon sambal. Stir-fry about 2 minutes, adding more oil if needed.

Add basils, oyster sauce, soy sauce and additional sambal (use less sambal for milder version). Add noodles and toss.

Transfer to serving platter. Garnish, if desired, with sprigs of fresh basil.

2 cups boiling water 10 sun-dried tomatoes, packed without oil 2 cups all-purpose flour 1/4 cup semolina flour or yellow cornmeal 1 tablespoon sugar 1 1/2 teaspoons baking powder 3/4 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon dried basil 1/4 teaspoon ground red pepper 1/4 cup chilled butter or stick margarine, cut into small pieces 1 cup low-fat buttermilk Cooking spray

Combine boiling water and sun-dried tomatoes in a bowl; let stand for 15 minutes. Drain and chop. Preheat oven to 425°.

Lightly spoon flours into dry measuring cups; level with a knife. Combine all-purpose flour and next 7 ingredients (all-purpose flour through pepper) in a bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. (Flour mixture and butter can also be combined in a food processor; pulse until mixture resembles coarse meal.) Add tomatoes and buttermilk; stir just until moist.

Turn dough out onto a heavily floured surface; knead lightly 5 times. Roll dough to a 1/2-inch thickness; cut with a 2 1/2-inch biscuit cutter. Place on a baking sheet coated with cooking spray. Bake at 425° for 15 minutes or until golden.

INGREDIENTS:

6 large egg yolks 1/4 cup sugar 1 teaspoon all-purpose flour pinch salt 2 cups milk, warmed 1 tablespoon good Kentucky Bourbon sweetened whipped cream and freshly grated nutmeg or ground cinnamon, for garnish

Place a medium glass bowl in the refrigerator to chill. In a heavy nonreactive saucepan combine the egg yolks, sugar, flour, and salt. Beat until the mixture is pale yellow. Place over low heat and slowly stir in the warm milk. Cook, stirring constantly, until custard coats a wooden spoon quite thickly, about 5 minutes.

Immediately pour the custard into the chilled mixing bowl; cover and place in the refrigerator until custard is cold, about 2 hours. When the custard is chilled, stir in the bourbon.

Serve in dessert cups, topped with sweetened whipped cream. Sprinkle a little nutmeg or cinnamon over the whipped cream. Serves 4.
