Easy Tortellini Soup
Easy Tortellini Soup Serves 4 1 tbsp olive oil 1 small onion, chopped 1 clove garlic, minced 1 (15 oz) can diced tomatoes 2 (14 oz) cans reduced-sodium, low-fat chicken broth 1 (9 oz) pkg of fresh (refrigerated) stuffed tortellini 2 tbsps balsamic vinegar 1 cup chopped fresh spinach or 1/2 cup frozen chopped spinach Freshly ground black pepper Heat oil in a large soup pot over medium-high heat. Add onion; cook, stirring, until softened. Add garlic; cook, stirring, for 30 seconds. Pour in tomatoes and their liquid and broth; bring to a boil, then let simmer for 10 minutes, stirring occasionally. Add tortellini; cook until tortellini are heated through, about 3 minutes.
