Famous Recipes - Balinese Style Fish
Balinese Style Fish (Ikan Bali)
Balinese is one of Indonesian's ethnic group.
*Ingredients : *Serves 6
1 kg Fish steaks
2 Medium onions, finely chopped
2 cloves Garlic, finely chopped
1 1/2 teaspoons Finely grated fresh ginger
1 1/2 teaspoons Sambal ulek
1 teaspoon Finely grated lemon rind
1 teaspoon Galangal powder
2 tablespoons Lemon Juice
2 tablespoons Palm sugar or substitute
2 tablespoons Dark soy sauce
1/2 teaspoon Salt
Peanut oil for frying
*Method :*
- Wash fish, dry on absorbent paper towels and cut into serving portions. - Heat about 2 tablespoons oil in a small saucepan and fry the onions until soft. - Add garlic and ginger and stir over medium heat until golden brown. - Add sambal ulek, lemon rind, laos, lemon juice, sugar, soy sauce and salt and simmer for 2 to 3 minutes. - Set aside. - Heat peanut oil for deep frying and fry the fish until golden brown on both sides. - Drain, put on serving plate and spoon the sauce over.
Sambal Ulek (Hot Chili Paste)
*Ingredients :*
25 Fresh red chilies
2 teaspoons Salt
Vinegar or tamarind liquid
*Method :*
- Put the chilies, seeds and all, into a container of an electric blender. - Add enough vinegar or tamarind liquid to keep the mass moving. - Blend to a paste. - Add Salt. - Put into a sterilized bottle and store in the refrigerator. - Use as required in the recipes.
