Poached Eggs with Cheese Sauce
2 T. butter
1/4 cup flour
2 cups milk
1/2 t. salt
1/4 t. pepper
1/2 cup heavy cream
1/3 cup grated Parmesan cheese
2 t. Dijon mustard
8 eggs
bread crumbs
Melt butter. Stir in flour and when blended, stir in the milk slowly. Cook
and stir until thickened. Add salt, pepper, cream, cheese and mustard. Cook
and stir until blended. Meanwhile, poach the eggs, put a little sauce in
each of 4 or 8 oven proof dishes or in 1 big casserole. Sprinkle lightly
with crumbs and place under broiler for 1 minutes. Serve at once. Serves 4
