Lemon Marinated Orange Roughy
> Substitutes: Oreo Dory, Catfish, Haddock
>
> 1 lb. orange roughy
>
> Marinate
>
> 3 Tbsp. lemon juice
> 1 clove garlic, crushed
> 1 Tbsp. brown sugar
> 1 tsp. finely chopped ginger root
> 1 Tbsp. oil
> 1/4 tsp. salt
>
> Combine marinade ingredients, mix thoroughly. Pour over fillets
and marinate in refrigerator for 1 hour, turning once. Broil 4 to 5
inches from heat for 3 to 4 minutes on each side basting frequently
with marinade.

> Peanut Coated Orange Roughy
> Yield: 3 to 4 servings
> Substitutes: Catfish, Haddock, Flounder
>
> 1 lb. orange roughy fillets
> 1/2 cup milk
> 1/4 lb. salted peanuts, finely chopped
> 1/4 cup flour
> 1 oz. butter
>
> Cut fillets into serving size pieces. Combine finely chopped
peanuts and flour. Dip fish pieces into milk, then into peanut and
flour mixture, coating well. Heat butter in pan and cook fish 6 to 8
minutes (if using frozen fillets, allow an extra 3 minutes), turning
once. Drain. Serve immediately with salad

> Garlicky Orange Rough
> Yield: 4 servings
> Easy and tender with a subtle garlic flavor.

> 32 oz. Orange Roughy fillets
> 1 cup whole milk or half and half
> 1/4 cup melted butter or olive oil
> 1 tsp. paprika
> 1 cup dry breadcrumbs
> 1/4 cup minced garlic
> 2 tbsps chopped parsley (opt)

> Preheat oven to 425 degrees F. Spray a 9 X 9 baking dish lightly
with cooking spray. Place fish in a single layer in pan. Pour milk
over fish.
> Combine remaining ingredients and spread over fish. Bake 20 to
25 minutes, until fish can be flaked with a fork. Do not overcook.
Serve with boiled potatoes, or crisp shoestring french fries and
cole slaw.

> Broiled Orange Roughy
> Yield: 6 servings
> You can substitue halibut or red snapper.
>
> 6 orange roughy fillets
> 2 tbsps. white wine
> 1 tsp. grated fresh ginger
> 1 tbsp. minced onions
> 1 garlic clove, mince
> 1/2 tsp. lemon juice
> 1/2 tsp. soy sauce
> 1/4 tsp. crushed red pepper flakes
> 2 tbsps toasted sesame seeds (opt.)
> parsley (to garnish)

> Place fillets in a shallow baking dish. Combine white wine,
ginger, onion, garlic, lemon juice, soy sauce and crushed red pepper
and process in a blender until smooth. Pour over fillets, cover and
marinate in refrigerator about 1 hours. Remove the fillets from the
marinade and season with salt and pepper then coat both sides with
sesame seeds. Spray broiler pan with non-stick vegetable spray and
pre-heat broiler. Broil about 4 inches from heat for 6 to 8 minutes
or until fish flakes easily with a fork. Be careful not to overcook!
Serve with lemon. Garnish with Parsley.

> Yield: 4 servings

> 3 tbsps. lemon juice
> 1 tbsp. Dijon mustard
> 1 tbsp. margarine, melted
> 1/4 tsp black pepper

> 4 4 oz. orange roughy fillets
> lemon wedges
>
> In a small mixing bowl, stir the first 4 ingredients until well
blended; divide mixture in half. Place the fish fillets on a rack of
a broiler pan that has been coated with cooking spray. Brush fillets
with half the lemon juice mixture. Broil 5 1/2 inches from heat
(with electric oven door partially opened) for 5 minutes or until
fish flakes easily. Drizzle with the remaining half of lemon juice
mixture. If desired, sprinkle with additional pepper and some salt;
serve with lemon wedges.

> Citrus Jerk Orange Roughy
> Yield: 4 servings
> A quick, easy, healthy dinner.
>
> 4 4 oz. orange roughy fillets
> 1 tbsp. plus 1 tsp. jamaican jerk spice
> 1 tsp olive oil
> 4 tbsps orange marmalade
> 3 tbsps water
> 2 tbsps. lemon juice
> 1/4 tsp. pepper
>
> Sprinkle both sides of the fish fillets with the jerk seasoning;
pressing gently to adhere. Coat a large nonstick skillet with
cooking spray. Add in oil and heat over medium-high heat until hot.
Add fillets; cook for 3 minutes on each side or until fish flakes
easily. Remove fillets from skillet; set aside and keep warm. Add
orange marmalade and the remaining ingredients to the skillet. Bring
mixture to a boil; cook for 1 minute. Pour sauce over fish fillets;
serve immediately.
