Maria Luigia's Eggs with Cheese

8 eggs
1/4 cup heavy cream
3 T. freshly grated Parmesan cheese
1 small onion, very finely chopped
Pepper

Put the cream into a large shallow oven proof dish. Break the eggs into the
cream. Sprinkle them with the cheese and lastly add the finely chopped
onion. Bake in preheated 350 oven for about 10 minutes or until the whites
are set and the yolks still soft. Season with pepper to taste and serve.
Serves 4
