This represents more than one-fourth of the nation's total. Here's what you need 1 1/4 cups water 4 pods cardamom, slit 1 stick cinnamon, broken in half pinch nutmeg 1 clove 2 cups strong, freshly brewed Mysore coffee 1 cup milk 2 tablespoons sugar or honey, or sweeten to taste
In a medium-size pot, bring water to a boil. Stir in the spices, cover, and simmer over low heat for 5 minutes. Stir in the pre-brewed coffee.
Meanwhile, in a saucepan, heat milk until almost boiling. Strain the coffee through a fine mesh strainer covered with cheesecloth into the milk. Add sweetener, stir, and serve in mugs. Makes 4 servings.

1 cup vanilla yogurt 1/4 cup honey 1 1/2 tablespoons milk (to thin out dressing) cinnamon and nutmeg to taste 1 1/3 cups Strawberries 1 1/3 cups blueberries 1 1/3 cups rasberries fresh peppermint leaves, finely chopped
Wash, stem and sort berries. In a small bowl combine yogurt and honey and whisk together. Add cinnamon and nutmeg and whisk until well incorporated. Add milk to thin down. Place berries in serving bowls and drizzle the yogurt dressing over the top. Garnish with mint and serve immediately.

Steak with Onion Sauce
1 tablespoon olive oil or vegetable oil
4 (6 to 8 oz. each) skirt or cube steaks
Salt & pepper to taste
1/3 cup Heinz® Red Wine Vinegar
1 medium thinly sliced onion
Heat olive oil in large skillet over high heat.
Generously season both sides of steaks with salt and pepper. Cook steaks until browned, 4 to 5 minutes per side.
Transfer steaks to serving plate.
Reduce heat to medium. Add onion, cooking and stirring until softened, 4 to 5 minutes.
Add vinegar and any juices from the steaks; heat through.
Spoon onion sauce over steaks.
Yield: 4 servings

Cherry Stuffed Grilled Chicken 1 1/2 cups pitted and coarsely chopped Northwest fresh sweet cherries 1/4 cup chopped onion 1 teaspoon chopped fresh sage 1/2 teaspoon each salt and chopped fresh thyme 4 boneless, skinless chicken breast halves 4 to 6 ounces each 3 tablespoons olive oil 2 tablespoon white wine vinegar 1 1/2 teaspoons garlic salt 1/2 teaspoon coarsely ground pepper Combine cherries, onion, sage, salt and thyme; mix well. Cut a pocket on the thicker side of the chicken breast; sprinkle lightly with salt if desired. Stuff 1/4 of cherry mixture into the pocket; close opening with metal skewers or wooden picks. Combine oil, vinegar, garlic salt and pepper; mix well. Add stuffed chicken breasts and marinate for 1/2 hour in refrigerator. Broil or grill chicken breasts, brushing with marinade, until fully cooked and juices run clear when sliced.
Makes 4 servings. Oven Method: Brown stuffed chicken in oven-safe skillet on both sides. Bake at 375° F 12 to 15 minutes or until juices run clear. Servings: Makes 6 scones
Ingredients: For the Scones: 1 3/4 cups all-purpose flour 1/4 cup granulated sugar 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1 1/2 teaspoons grated orange peel 1/4 teaspoon salt 1/4 cup cold unsalted butter 1/2 cup finely chopped dried apricots* (See Note Below) 1/4 cup sour cream 1 egg 3 tablespoons milk For the Topping: 2 teaspoons orange juice 1 tablespoon coarse sugar
Apricot-Butter Spread: (optional) 2/3 cup butter, softened 4 tablespoons apricot preserves
Instructions: To Make the Scones : Preheat oven to 375°F (190°C).
Combine 1 1/2 cups flour, 1/4 cup sugar, baking powder, baking soda, orange peel and salt in large bowl; cut in 1/4 cup cold butter until mixture resembles coarse crumbs.
Coat apricots with remaining flour in small bowl; stir into flour mixture.
Combine sour cream, egg and milk in same small bowl. Stir into flour mixture just until moistened (1 minute). Turn dough onto lightly floured surface; knead 5 to times until smooth.
Pat dough to 7-inch circle on greased baking sheet. Score into 6 wedges; do not separate.
Topping:Brush dough with orange juice; sprinkle with 1 tablespoon sugar.
Bake for 18 to 23 minutes or until lightly browned. Serve with Apricot-Butter Spread, jam or preserves, jelly, double or clotted cream, or creme fraiche.
Makes 6 scones.
To Make Apricot-Butter Spread: Combine 2/3 cup softened butter and apricot preserves in small bowl. Cover, and refrigerate until ready to serve scones. Put two tablespoons of Apricot-Butter Spread into six (6) small butter ramekins, and serve with each scone.
*Note on Substitutions* If desired, substitute 1/2 cup of your favorite dried fruit for the dried apricots in this recipe. If you are substituting another dried fruit for the apricots, you can also substitute another flavor preserves to make the "Butter Spread" in this recipe. For example;for Peach-Butter Spread; use peach preserves instead of apricot preserves.

3 cups unbleached all purpose flour 1/4 cup plus 2 teaspoons sugar 1 3/4 teaspoons baking powder 1/4 teaspoon salt 10 tablespoons (1 1/4 sticks) chilled unsalted butter, cut into small pieces 3/4 cup dried cranberries l/2 cup buttermilk 3 large eggs 1 teaspoon water
Position rack in center of oven and preheat to 375F. Butter two 9- inch-diameter cake pans. Combine flour, 1/4 cup sugar, baking powder and salt in large bowl. Add butter; rub in with fingertips until mixture resembles coarse meal. Add cranberries. Whisk buttermilk and 2 eggs in small bowl. Stir into dry ingredients. Turn out onto floured surface. Knead gently just until soft dough forms. Divide dough into 2 pieces. Form each piece into ball. Transfer each ball to 1 prepared pan. Press out dough into 8-inch-diameter round. Using sharp knife, score top of each round into 8 wedges. Whisk remaining egg with 1 teaspoon water in small bowl. Brush mixture over scones. Sprinkle with 2 teaspoons sugar. Bake scones until golden, about 30 minutes. Cool 5 minutes. Invert scones onto platters. Turn right side up. Cut along score marks. Serve warm.

Preheat oven to 325º In a large bowl, beat applesauce, oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. (Blend in chopped nuts here if desired) . Spread batter into a greased 9x5 inch loaf pan. Bake for 50 to 60 minutes. Cool on wire rack for 1/2 hour before slicing. Tips: * Put browning bananas into the freezer until ready to use for your recipe. Makes the bread even more moist! * May change up the recipe by adding raisins or pumpkin pie spice. * Make it into 4 mini loaves and bake about 35 minutes.

4 cups water or peach flavored drink 10 Tetley Orange Peach Tea bags 8 cups sliced peaches, fresh or frozen 1 cup light brown sugar 8 tablespoons cornstarch 4 cups Bisquick baking mix 6 tablespoons light brown sugar 2 cups milk 2 eggs Fresh whipped cream or ice cream
Bring water to boil in heavy saucepan. Add tea bags and continue to boil 5 minutes. Remove and discard tea bags. Spread peaches in 9 x 13 baking pan and sprinkle 1 cup light brown sugar and cornstarch over top, then add tea. Blend baking mix, 6 tablespoons light brown sugar, milk and eggs in mixing bowl until dough is formed. Drop dough 1 tablespoon at a time evenly over peaches. Bake at 350ºF for 45 minutes, or until golden brown. Serve immediately topped with fresh whipped cream or ice cream. Serves 12-16.

Tarragon Marinated Chicken Breasts
4 skinless, boneless chicken breast halves (about 1 1/2 pounds)
1/3 cup olive oil or vegetable oil
1/4 cup Heinz Tarragon Vinegar
2 cloves garlic minced or 1/2 teaspoon garlic powder
dash salt & pepper
Place chicken in gallon size resealable plastic bag. In small bowl or jar, combine remaining ingredients. Pour over chicken; close bag. Refrigerate at least 2 hours or overnight, turning bag occasionally. Grill or broil as desired until chicken is fully cooked. Discard any remaining marinade and bag.
Yield: 4 servings

Balsamic Brined Grilled Pork Chops
Pork Chops: 3 cups water 1 cup brown sugar 1/2 cup balsamic vinegar 1/2 cup kosher salt 8 bone-in pork chops (8 oz each) - I used boneless pork loin chops
Basting Sauce: 3/4 cup balsamic vinegar 2 tablespoons olive oil 1 tablespoon brown sugar Kosher salt and freshly ground black pepper to taste
To prepare pork chops: Combine all ingredients except chops in a bowl. Stir until sugar and salt are dissolved. Place pork chops in a large sealable plastic bag; pour brine into bag to cover chops. Seal and chill at least overnight. (I ended up leaving them for 48 hours.)
To prepare sauce: Combine all ingredients in a bowl and set aside.
Prepare the grill. Drain pork chops and discard brine. Pat chops dry. Sprinkle with salt and pepper. Grill chops about 5 minutes per side for medium (longer if using thick boneless loin chops as I did). Note: I cut this recipe in half when I made it. I also took half the sauce and simmered it down until it was thick enough to coat the back of a spoon and drizzled it around the plates and a touch over the grilled chops.

Zucinni Meatloaf Muffins Ingredients 16 oz lean ground beef 1/2 c & 1 Tbsp dried fine bread crumbs 1/4 c finely chopped onion 3/4 c shredded unpeeled zucchini 2 tsp italian seasoning (separated) 8oz can tomato sauce (separated) 2 tsp Splenda 1/2 c & 1 Tbsp RF mozzarella cheese shredded Special Notes : Add garlic powder, salt and pepper if you like spicer . Preheat oven to 375. Spray 6 regular size muffin pan with cooking spray. In a large bowl combine meat, bread crumbs, onion, and zucchini, 1 tsp Italian seasoning, and 1/2 of the tomato sauce. Mix well. Evenly divide meat mixture between muffin cups and make an indentation in the center of each. In a small bowl combine the remaining tomato sauce, splenda, and 1 tsp Italian seasoning. Stir in mozzarella cheese. Evenly spoon about 1 Tbsp of sauce mixture into the indentation of each muffin. Bake 35 minutes. Place muffin pan on a wire rack and let set for 5 minutes. Existing homes continued to command premiums in May when the median price hit $235,000, according to the Arizona Real Estate Center at Arizona State University. That's a 6.3 percent jump from the April figure, the type of move that took a year to achieve in the late 1990s. Indeed, it is astonishing how many people who failed to either acknowledge the tech bubble in the 90s -- or at least failed to act on it -- now have no hesitation to declare real estate to be a bubble. This despite their lack of expertise or past track record in spotting bubbles on a timely fashion. The bubble du jour though is the housing bubble. From Greenspan's testimony to CNBC's Housing special to (uh-oh) this month's Fortune magazine cover, it seems to be all anyone wants to talk about. My position is that housing is not in a bubble -- yet. But it is an increasingly extended asset class that may be subject to a significant correction in the future. But a 25%-35% retracement is a very different situation than a bubble (recall that the Nasdaq dropped 80%), primarily because there are very different consequences for both homeowners and investors. Lastly, there is an intrinsic value of a house as a place where you can live; Compare this with a company whose only asset was a sock puppet -- the tulip bulb of its day -- and it's clear why a profitless, assetless, publicly traded company can go to zero. Chichen Breast Stuffed with Cuitlacoche in a Poblano Chile Cream Sauce An original creation by Leah Spinose de Vega Ingredients a.. 4 chicken Breasts-pounded flat b.. 2 poblano chile peppers-roasted, peeled and deveined. c.. 1 can cuitlacoche d.. 1/2 C sweet corn e.. 1 large jalapeno f.. 1 tsp. epazote (optional) g.. 3/4 C chicken broth h.. 3 cloves garlic i.. 1/2 medium sized onion -minced j.. 1/2 C sour cream k.. 1 1/2 C grated Monterrey Jack cheese l.. Flour m.. Salt n.. 1/2 tsp. ground cumin o.. Canola oil Directions Sauté onion and 2 cloves of garlic until tender, add jalapeno, sauté for 2 minutes, add cuitlacoche, corn and epazote. Simmer mixture for 3 minutes. Set aside. Pound chicken breasts flat between two pieces of waxed paper, trying not to break. Spread a thin layer of cuitlacoche mixture on flatten breast and sprinkle with approximately tablespoon of cheese. Roll breast and secure with 2-3 toothpicks. Lightly coat rolls with flour. Brown rolls in oil, making sure to brown all sides. Place in glass baking dish. Blend chicken broth, roasted poblano pepper, 1 clove garlic, cumin and a pinch of salt until smooth, add sour cream. Dollop remaining cuitlacoche on rolls. Pour poblano cream sauce over rolls. Bake, covered at 375 ° for 35 minutes. Sprinkle top with cheese bake uncovered for 5 minutes or until melted. Garnish with thin strips of remaining poblano pepper and fresh squash blossoms (when in season).

Quick, Easy -N- Fast Sautéed Chicken with Lemon Garlic Sauce 1 T. olive oil 1 garlic clove, minced 2 chicken breast halves salt, pepper 1/2 C. chicken broth 1/2 C. pitted kalamata or other intensely flavored olives 1 T. lemon juice 1 C. cooked rice, optional Heat oil in medium skillet. Add garlic and saute over medium heat 1 minute. Add chicken, seasoned with salt and pepper to taste, and brown 5 minutes per side. Remove chicken. Pour in broth and scrape up any browned bits. Return chicken to skillet along with olives. Cover and simmer 30 minutes. Remove chicken and keep warm. Add lemon juice and cook down liquids by a third. Return chicken to pan to heat through. To serve, spoon chicken and skillet sauce onto each of 2 plates. Serve rice on the side. Makes 2 servings. Chicken-Chorizo Burgers with Avocado Mayonnaise Bite-sized pieces of corn tortillas act as a binder in these sausage and chicken burgers. Mayonnaise: 1/3 cup fat-free mayonnaise 1/4 cup fresh cilantro leaves 2 tablespoons fresh lime juice 1/4 teaspoon salt 1/2 ripe peeled avocado, seeded Burgers: 1/2 pound Spanish chorizo sausage (such as Usinger's) 1/4 teaspoon salt 5 (6-inch) corn tortillas, torn into bite-sized pieces 1 1/2 pounds skinless, boneless chicken breasts, coarsely chopped 1 jalapeño pepper, seeded and chopped Cooking spray 8 (2-ounce) onion rolls, toasted 8 (1/4-inch-thick) slices tomato Prepare grill or broiler.To prepare mayonnaise, combine first 5 ingredients in a food processor; pulse 10 times or until combined. Cover and chill mayonnaise mixture. To prepare burgers, remove casings from sausage. Place sausage, salt, tortillas, chicken, and jalapeño in food processor; process 30 seconds or until mixture is coarsely ground.
