Walker Decoration Day by Thelly Reahm © Tidbits of Time 1995 Time was, when millions of Americans placed flowers on the graves of family members and war heroes...it was called Decoration Day. The custom was begun in 1865 in Waterloo, New York, to commemorate those killed in action in the Civil War. After WW I, Congress decreed May 30th a national holiday to honor the dead in all American wars. Disabled Veterans sold poppy's each holiday to raise funds for Veterans Hospitals (from the words about poppy's wave in Flanders Field). In 1971 lawmakers moved the holiday to the last Monday in May in order to give Federal workers a three-day weekend....I don't know for sure, but it was probably done at midnight on the last day Congress was in session. In the Thirties I used to tiptoe across the granite markers at Loma Vista Cemetery as a child. Somehow, walking on the raised mounds of grass made me queasy. Decoration Day was a whole family outing. The flowers we placed on our family's graves were fresh picked from our yards and gently placed in rusty vases set into the hard ground. Sweet Peas, Stock, Snap Dragons and even the lowly yellow nasturtiums that wandered over the edge of the wash out back of our house would make a colorful bouquet....we grew them well. Then we weeded around our family gravestones and polished the marker until we could see our faces in them. There was Grampa Hyder, Uncle Ed, Cousin Lawrence (shot in the hunting accident when he was twelve) and Grandpa and Grandma Miller (my half-brother's grandparents) and Cousin Ouita who died in Alaska. It was a bit different then than today....there's more of a military flavor now to the happenings, with bands and marching Scout Troups. Perhaps because we've had so many more wars. And now the fields of grass are strewn with plastic flowers. Not all change is good. For those of you with strong family ties or a bent toward continuing these stories or our genealogy program in the computer, I feel it is important for you to know the burial places of your ancestors. I, personally, have willed my body to the University of California San Diego (La Jolla Campus) for medical study. After any organs are used for transplant or study, the remainder will be cremated and the ashes scattered at sea. I find it a bit poetic that in life I couldn't swim a stroke, but in death I will become a water baby! So, there won't be a graveside of mine for you to place memorial flowers, or weeds to trim around a granite stone. You needn't clutter your mind with a dim memory of where my plot is. Most of us are so distraught at a Memorial Service that we can't begin to remember the location of our loved one's casket laden with flowers. And as the list of our family members denotes, the body has been placed in a cemetery near the town in which they died. If you have moved away from that area it is all the more difficult. Instead I am giving you a different kind of memorial. I give my book of memories "Tidbits of Time" and this poem penned just for you: Scattered At Sea I will be in the waves you ride, on the morning tide.... I will be in the warm, coarse sand you smooth with your hand.... I will be on the soaring wings, of the bird that sings..... I will be diadems in waves As they flow in caves.... I will be in the night moon glade, And damp morning shade.... I'll be the wind that holds the crest, so you'll be blessed.... I'm now the beach in many ways, In sun or fogbound haze.... Then I'll be gone like ebbing tide, But memories will abide.... I want my life to go on having meaning and purpose after I am gone, and because I believe that I will be home with the Lord in Heaven the instant my heart ceases to give life, I have no regret in giving my empty, pain ridden body for Science to study. I am not here. I did not die spiritually. This is not the end. I have life everlasting. Eternity is mine. America West US Airways Merger America West US Airways Merger America West – US Airways Merger America West – US Airways Merger Phoenix, Arizona -- With the announcement of the merger of America West and US Airways, no immediate impacts to flights at Phoenix Sky Harbor International Airport are expected. America West and America West Express currently operate out of 50 gates with 333 flights per day to 96 destinations. In 1983 when the airline began, Sky Harbor served just over 8 million passengers. Today the airport serves nearly 40 million passengers and America West and its partner America West Express handle nearly 50% of those passengers. “Sky Harbor Airport and America West have grown up together,” said Phoenix Aviation Director, David Krietor. ”A positive move for the airline can mean only good things for Sky Harbor Airport and the entire state of Arizona.” US Airways serves approximately 50 additional markets not currently served at Sky Harbor. The airline currently has over 3,000 daily departures and operates in close to 200 airports system-wide. In reaction to the news, Phoenix Mayor Phil Gordon said, “America West has been an important part of the Valley for over 20 years. The city of Phoenix has a strong partnership with our hometown airline and will continue to maintain that partnership. This is exciting news. Chicken and Bow Tie Pasta Easy and delicious chicken and bow-tie pasta with a white cream sauce.
Prep Time: approx. 10 Minutes. Cook Time: approx. 30 Minutes.
4 boneless, skinless chicken breast halves 1 (12 ounce) package farfalle (bow tie) pasta 1 (14 ounce) can chicken broth 1 head broccoli, cut into florets 1 medium red bell pepper, thinly sliced 2 cloves garlic, minced salt and pepper to taste 2 (8 ounce) containers chive and onion cream cheese 1/4 cup freshly grated Parmesan cheese
1. Place chicken in a saucepan, and add water to cover. Boil 20 minutes. Allow to cool, then pull meat into shreds.
2. Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
3. In a large skillet over medium-high heat, combine chicken broth, red pepper, garlic, broccoli, salt and pepper. Cover, and simmer for 8 to 10 minutes, until broccoli is crisp-tender. Stir in cream cheese until smooth. Mix in chicken and pasta until evenly coated. Garnish with Parmesan cheese. _________________

Quick corned beef hash
Serve it for breakfast with a fried egg or two on top.
1 can corned beef 2 large boiling potatoes 1 small onion salt, pepper 2 TB butter 2 TB oil 1/3c heavy cream (optional)
Peel and boil the potatoes and dice fine. Peel and chop the onion. Mix in a bowl with the corned been and add pepper (a lot!) and some salt. Go light on the salt as the beef tends to be salty. Note: the "ideal" ratio of ingredients will be 4 parts beef, 3 parts potato, 1 part onion. This is just a guideline, however. Heat the butter and oil in a nonstick skillet that is large enough to hold all the hash in a layer abut 1 inch thick. Add the hash to the pan and use a spatula to press it down firmly. Pour the optional cream over the hash. Cover the pan and cook over medium low heat for about 10 minutes, until a lovely brown crust forms on the bottom. Invert onto a plate and serve.

POT ROAST IN A BAG
INGREDIENTS: 1 14 x 20", plastic oven bag (see below)1 to 1 1/2 LB boneless beef roast, cut to 4 servings2 Tbsp flour1/4 tsp salt, or to taste1/4 tsp pepper, or to tastechopped garlic, optional2 potatoes, cut into thick wedges, skin on1 bell pepper, seeded & cubed3-4 carrots, cut to large chunks1 onion, cut in quarters, optional2 stalks celery with leaves, cut into chunks1 cup water1 envelope instant leak soup mix, optional DIRECTIONS: Preheat oven to 350 F (176.67 C). Use a large baking pan, 2" deep and about 9 x 13, or larger. Place flour in the bag & shake to coat the inside of the bag well. Add the soup mix to water & mix. More water can be used, if desired. Place vegetables in the bag in one layer. Rub the roast with salt & pepper & place on top of the vegetables. Pour the water mixture over the meat. If not using the soup mix just pour the water over the meat. Close the bag with the tie that comes with it. Place the bag in the pan so that it will not touch the sides of the pan, allowing for expansion during cooking. Cut 6 slits in the top of the bag to vent. Cook for 35-40 minutes or until meat & vegetables are cooked. Be careful when serving as the steam is hot.

SERVING TIPS: Meal can be prepared without the bag using foil to cover the roasting pan, adjust cooking time if necessary. Add a salad & enjoy a good meal with little clean-up. I like to use Reynolds® Oven Bags (aluminum and plastic).

1 medium onion, sliced 2 tablespoons vegetable oil 1 (15-ounce) can black beans, rinsed and drained 1 (10-ounce) can diced tomatoes and onions with lime juice and cilantro 1 (10-ounce) can enchilada sauce 2 cups cubed cooked chicken 1 teaspoon salt 1/2 teaspoon ground cumin 1/2 teaspoon chili powder 1/2 teaspoon dried oregano 1/2 teaspoon ground pepper 1 1/2 cups all-purpose baking mix 1 large egg 2/3 cup milk 1 cup (4 ounces) shredded extra-sharp Cheddar, divided 1/2 cup chopped fresh cilantro leaves, divided 2 avocados, sliced 1 tablespoon lime juice Sour cream
Preheat the oven to 400 degrees F. Saute onion in hot oil in a 10-inch cast iron skillet over medium-high heat 3 to 4 minutes or until tender. Stir in beans and next 8 ingredients. Bring to a boil; reduce heat and simmer, uncovered, 15 minutes.
Combine baking mix, egg, and milk in a medium bowl, stirring until smooth. Fold in 1/2 cup cheese and 1/4 cup cilantro; pour over simmering chicken mixture.
Bake for 20 minutes or until a wooden pick inserted in topping comes out clean. Sprinkle with remaining 1/2 cup cheese and remaining 1/4 cup cilantro. Sprinkle avocado slices with lime juice, and arrange over cobbler. Serve with sour cream.

Grilled Tuna with Citrus Shallot Vinaigrette Categories: Polkadot, Faylen, Seafood Yield: 2 Servings
1 Lemon, zest and juice 1 Lime, zest and juice 1 tb Rice wine vinegar 2 tb Shallots, sliced into -rings 1 tb Sugar 1 tb Oil 1/4 ts Crushed red pepper -oil or non-stick spray 2 Yellowfin tuna steaks, 6-9 -oz each, -and at least 1" thick -Preheat the grill.
Using a swiveled-edge vegetable peeler, remove the outside peel of the lemon and lime. Try not to take the white pith along with the peel. Julienne the peel. Bring a cup of water to a boil, and drop the julienne peel in for 30 seconds. Drain into a strainer and rinse with cold water. Squeeze the juice from the lemon and lime and combine with the peel, vinegar, shallots, sugar, oil, and crushed red pepper to create the vinaigrette. Coat the tuna steaks lightly with oil or spray with non-stick spray. Grill for 2-3 minutes per side, basting with a little of the liquid from the vinaigrette. Remove to plates and top with remaining vinaigrette. Serves 2

4 To 6 med shallots 1 Clove garlic Olive oil 2 tb Balsamic Vinegar 2 c Good quality Burgundy Wine 4 Sprigs fresh Thyme 3 c Reduced brown veal stock Salt Pepper 1 ts Or 2 unsalted butter - optional
1. Peel and finely slice shallots. Peel garlic.
2. Saute shallots and garlic in a little hot oil over medium heat for 2 to 3 minutes.
3. Deglaze pan with balsamic vinegar and reduce until vinegar almost disappears. Add wine and thyme. Bring to boil then simmer slowly until shallots have absorbed all the wine.
4. Add veal stock, bring to boil and simmer slowly until reduced to a third of its original volume. With a small ladle skim off any scum that rises to the top. Remove from heat, discard garlic and thyme.
5. Season to taste with salt and pepper. Serve with grilled beef or veal. Sauce can be enriched by whisking in 1 or 2 teaspoons ( to taste ) of unsalted butter. Makes 2 cups sauce or 4 to 6 servings. This dish was published by Toronto Star Starweek,

This easily assembled casserole can be prepared earlier in the day. Keep refrigerated until you are ready to bake and serve.
3 (4-6-oz.ea) fresh boneless, skinless chicken breasts, cut-up bite size 1 onion, peeled and chopped 1 green bell pepper, seeded and chopped 1 cup chicken broth 10 corn tortillas 1/2 lb cheddar cheese, grated 1 1/2 tsp chili powder 1 can cream of chicken soup 1 can cream of mushroom soup 1 (10-oz.) can diced tomatoes and green chiles
Preheat oven to 350°F.
In a large bowl, combine chicken, onion and green bell pepper.
In a saucepan over medium heat, heat broth until steaming hot, about 5 minutes.
Dip corn tortillas in hot chicken broth to soften; alternately layer chicken mixture and the tortillas in a greased 13x9x2-inch baking dish, beginning with chicken and ending with the tortillas.
Top in order with cheddar cheese, chili powder, cream of chicken soup (mixed with any remaining chicken broth), cream of mushroom soup and diced tomatoes and green chilies.
Bake in oven for 30 to 45 minutes or until creamy cheese mixture is bubbly.
Serve hot.

2 packages (box not bag) frozen broccoli (cooked and drained) 1 c. dry stuffing, unseasoned 1/4 c. melted margarine
Combine: 2 beaten eggs 1 chopped onion (medium) 1 can 10 3/4 oz cream of mushroom soup 1/2 c. mayonnaise 1 c. grated cheddar cheese
Place a layer of broccoli, a layer of the egg mixture and repeat layers. Top with stuffing and melted margarine. Bake at 350 for 30 minutes.

Hello to all,
I just wanted to drop a few lines to let everyone know that I recived my back messages from last year and to post a list of what jar recipes I have saved on my computer as of now. And most importantly I'll be posting a couple of my favorite recipes from Emeril Live to show my thanks and graditude. This is a great way to use left over meats--We even use left over fried chicken pulled off the bone.
1 3 -4 ounce package cream cheese, softened 3 tablespoons margarine or butter, melted 2 cups cubed cooked chicken,turkey,ham or beef roast 1/4 teaspoon of salt optional 1/8 teaspoon of pepper 2 tablespoons of milk 1 tablespoon chopped chives or onion or both 1 small jar pimento, 1 8 oz can Pillsbury Refrigerated Quick Crescent Dinner Rolls 3/4 cup of seasoned croutons, crushed
Heat oven to 350. In medium bowl, blend cream cheese and 2 tablespoons of butter until smooth. Add next 6 ingredients; mix well. Separate dough into 4 rectangles; firmly press perforations around edges to seal. Spoon 1/2 up of mixture onto each rectangle. Pull the 4 corners of dough to the top of the mixture, twist slightly and seal edges. Place on an ungreased NON STICK cookie sheet. Brush tops with reserved 1 tablespoon of butter; sprinkle with crouton crumbs. Bake at 350 for 20-25 minutes or until golden brown.

INGREDIENTS: 1/2 cup firmly packed flaked coconut 3/4 cup chopped pecans 2 cup firmly packed brown sugar 2 cup flour mixed with -- 1 1/2 Tbsp baking powder 1/4 tsp salt
DIRECTIONS: Layer ingredients in order given in a 1 quart wide-mouth canning jar. Press each layer firmly in place before adding next ingredient.

Butterscotch Brownies
1. Empty jar of brownie mix into large mixing bowl. Use your hands to thoroughly blend mix. 2. Add: 3/4 cup (1 1/2 stick) butter or margarine, very soft 2 eggs, slightly beaten, 2 tsp vanilla (opt.) 3. Mix until completely blended. 4. Spread batter into a sprayed 9x13 metal pan. 5. Bake at 375 degrees F for 25 minutes. 6. Cool 15 minutes in baking pan. Cut brownies into 1 1/2 inch squares.

2 chayotes 2 small tomatoes, roasted (see Note) 2 cloves garlic, chopped 2 tablespoons vegetable oil 1/4 cup finely chopped onion 3 Arbol chilies 1 1/4 cups water 1 teaspoon salt 1 tablespoons dried epazote or 2 tablespoons fresh
In a large heavy skillet, heat the oil over medium low heat. Saute the onion with the whole chilies for about 2 minutes, without browning. Add the tomato garlic puree and continue cooking, stirring and scraping the bottom and corners of the pan for about 3 minutes, until thickened and reduced. Add the chayotes, water and salt. Cover the pan and cook over medium heat. After 10 minutes, add the epazote, cover the pan again and cook for 10 to 15 minutes more, until the chayote is softened but not watery. Makes 6 servings
Note: To roast a tomato, heat a dry skillet or griddle over high heat. Roast the whole tomato, turning when the bottom is slightly charred, until it is golden brown with charred patches on all sides, but not burned, the flesh will be quite mushy. Leave the skin on.

1 can cream of mushroom soup 1 lb. hamburger 1/2 c. dry bread crumbs 1 egg, beaten 1/4 c. onion, chopped finely 1 1/2 c. sliced mushrooms (optional)
Mix together 1/4 c. soup, hamburger, bread crumbs, egg, and onion. Shape into 6 patties. Cook patties in skillet over medium heat until brown on both sides. Drain fat. Remove hamburgers from skillet, and add remaining soup and mushrooms, stirring well. Return hamburgers to skillet and reduce heat to low. Cover and simmer 20 minutes or until done.

* There is no substitute I know of for this, check specialty stores.
Rub the cottage cheese through a fine sieve, if desired, and mix with the milk, oil, sugar, vanillin sugar and salt. Mix and sieve together the flour and the Backin (baking powder) and add to the mixed ingredients, a little at a time, until slightly more than half has been used. Knead in the rest of the flour.

Pasta with zucchini
Easy to cook and delicious, this dish really says "summer" to me. Serves 4.
6 small zucchini (6" long and 1" in diameter) 2 lb fresh ripe tomatoes 2/3 c olive oil 1 clove garlic 1/2 c diced onion 1/3 c diced carrot 1 lb pasta (I suggest spaghetti or linguini)
Heat 1/3 c oil in a saucepan and sauté the onion over medium heat for about 5 minutes. Add the carrot and continue for another 4-5 minutes. Add the coarsely chopped tomatoes and their juice (you may skin them if you like but I do not think it is necessary). Simmer uncovered until reduced and thickened - this may take 30 minutes or it may take longer depending on the tomatoes and how you like the sauce. Add salt to taste.
Cook the pasta according to directions. Try to time the pasta so it is done while the zucchini are cooking. Drain, return to pan, and mix in a ladle-full of sauce.
Heat the remaining oil in a non-stick skillet. Add the garlic clove, peeled and cut into quarters, and cook until just beginning to color. Remove garlic and discard. When oil is quite hot, cut zucchini in half lengthways and then in half crossways. Add to pan and sauté, tossing frequently, until zucchini is lightly browned and barely cooked thru. It is essential not to overcook the zucchini - you want a bit of "crunch" remaining in the center.
Divide the pasta among 4 plates. Put some more sauce on top, then the zucchini. Serve with lots of freshly grated romano cheese.

1 lb. white eggplant, quartered 1 lb. purple eggplant, quartered 1 lb. yellow squash, halved 1 lb. zucchini, halved 1/2 lb. green beans, trimmed
1/4 c. olive oil 2 T. balsamic vinegar 1/2 t. salt 1/2 t. pepper
Combine veggies in a large mixing bowl; set aside. Whisk remaining ingredients together; pour over veggies, tossing to coat. Place veggies, cut-side down if applicable on a hot grill; grill for 3 to 5 minutes. Turn; grill until tender, about 3 to 5 additional minutes. Makes 8 servings.

1-1/2 lbs. fresh Brussel sprouts 2 Tablespoons olive oil 2 cloves garlic; peeled and sliced 1 medium onion, peeled and sliced thin 1/4 cup Balsamic vinegar 2 Tablespoons butter (melted) Salt and pepper, to taste Parmesan cheese (optional)
Trim off stems and remove any limp leaves from fresh Brussel sprouts. Blanch the sprouts in boiling water for 5-minutes; drain. Heat a large frying pan; add olive oil, garlic and onion. Sauté a few minutes until onion is tender. Add blanched and drained Brussel Sprouts. Cook until sprouts are at your desired tenderness. Add Balsamic vinegar. Toss just until the sprouts are thoroughly coated.
Place sprouts in a serving dish. Pour melted butter over top. Sprinkle with salt and pepper, and Parmesan cheese, if desired.

Sweet & Tangy Chicken
6 slices bacon 8 skinless boneless chicken thighs flour -- for dredging 1/3 cup honey 3 tablespoons Dijon mustard 1 teaspoon curry powder salt ground cayenne
Cook the bacon in a skillet over medium heat until crisp, about 5-8 minutes. Remove with a slotted spoon, reserving bacon drippings in the pan. Drain bacon on paper toweling, crumble and set aside. preheat the oven to 350 degrees Dredge the chicken pieces in flour; season to taste, shake off excess. Place skillet with the reserved bacon drippings over low heat; add the chicken pieces and cook until browned on all sides, about 10 minutes. Transfer chicken to a medium casserole (8X8) and bake chicken uncovered for 30 minutes. In a small bowl combine the honey, mustard, curry powder, salt and cayenne to taste. Drizzle honey mixture over the chicken and bake another 15 minutes. Top with bacon just before serving.

A young and old cowboy's favorite.
Serves 6.
1 (2 pound) round, chuck or rump roast 1/2 cup flour 1 teaspoon salt 1 teaspoon pepper 1 tablespoon vegetable oil 1 small onion, chopped 1 small green pepper, chopped 1 stalk celery, thinly sliced 1 (16 ounce) can stewed tomatoes, undrained
Combine flour, salt and pepper. Beat onto both sides of meat.
In large skillet or Dutch oven heat oil over medium-high heat; brown meat. Add remaining ingredients and simmer for 1 1/2 to 2 hours until meat is fork tender.
