[ world-famous-recipes ] Zucchini Cake

ZUCCHINI CAKE

6oz butter
2 teaspoons finely grated orange rind
1 cup caster sugar
2 eggs
1 1/2 grated zucchini
1/4 cup orange juice
1 1/2 cups self raising flour.

Grease a slab pan, line base with baking paper.
Beat butter, rind and sugar in a small bowl with electric mixer
until light and fluffy. Add egg one at a time, beating until just
combined between each addition.
Transfer mixture to a large bowl; Stir in zucchini, juice and
flour, spread mixture into prepared pan.
Bake in mod oven about 40 minutes. Stand cake 5 minutes.
Turn out onto a wire rack to cool. Top with orange icing.
