a splash of sherry and is served over rice.

David from Third World Country is definitely “dishing” with his Infidel Casserole.

Michele over at Meanderings has offered up a Zesty Tomato Rice recipe
that calls for diced pork. Michele, like the rest of us wonders why poor
Piglet is being targeted. Ideas anyone?

AFSis has submitted a yummy pork dish from Her Side of the Puddle.
This recipe for Pork Tenderloin with Scallion Sauce, but be sure to

Baked Pork Chops

Baked Pork Chops

   1/2           cup  Honey Mustard
  1 1/2         pounds  Pork Chops -- 6 chops
                        Non-Stick Cooking Spray
  3               cups  Long-Grain Brown Rice -- cooked

Preheat oven to 425 degrees F.  Spray 9x13 pan with non-stick cooking spray,
and lay pork chops in pan.  Spread honey mustard over tops of pork chops.
Cover pan with aluminum foil, and bake 20-25 minutes or until pork chops are
no longer pink inside.  Serve hot with rice on the side.

For freezing:  Label and freeze covered, prepared pork chops (as directed
above) for up to 6 months.  To cook, thaw overnight in refrigerator and bake
as directed above.

Vietnamese-Spiced Pork Chops

Vietnamese-Spiced  Pork Chops (Cooking Light)

4 (4oz.) boneless center-cut loin pork chops
2 tbsp brown sugar
2 tsp aparika
2 tsp ground coriander
1 tbsp bottled minced ginger
2 tsp bottled minced garlic
1/2 tsp crushed red pepper
3/4 tsp salt
cooking spray
Sliced green onions (optional)

Lightly score a diamond pattern on both sides of pork.
Combine sugar and next 6 ingredients (sugar through salt); rub
evenly over pork.

Heat a large non-stick skillet coated with cooking spray over medium-
high heat.
Add pork; cook 4 minutes on each side or until done.
Garnish with sliced green onions.

Yields 4 servings. (1 chop per serving)

STUFFED PORK CHOPS

STUFFED PORK CHOPS


4 thick pork chops, 1 1/2 inches thick, with pocket for stuffing
1/4 c. minced onion
1/2 c. raw long-grained rice
1 c. chicken broth
1/2 c. Parmesan cheese
1/2 c. ricotta or Mozzarella cheese
4 tbsp. chopped fresh basil or 2 tsp. dried basil leaves
1 clove garlic, minced
1/4 c. crumbled Gorgonzola or blue cheese
2 tbsp. olive oil
2 tbsp. butter

1. Trim any excess fat from pork chops. Cut pocket as deep as possible.

2. Saute onion in a skillet in oil until transparent. Stir in rice.
Cook a few minutes until lightly browned.

3. Add broth. Cook 20 minutes. Uncover. Cook a few more minutes,
fluffing with a fork to dry.

4. Stir in Parmesan cheese, Mozzarella cheese, basil, garlic and
Gorgonzola cheese. Stuff pork chops.

5. Using 2 heavy skillets, heat 1 tablespoons oil and 1 tablespoon
butter in each. Brown chops on each side over medium-high heat.

6. Cover. Lower heat. Cook for about 1 hour. Turn halfway through
the cooking time.
Check meat for doneness. Season with salt and pepper.

Serve with a baked sweet potato and a green vegetable.
We like either peas or cabbage...

Not diet food but a hearty stick to your ribs winter meal.

Low Fat Pork Chops

Low Fat Pork Chops

Servings: 2

4 Pork chops; thick, boneless
1 Egg White
2 tablespoons Pineapple juice, unsweetened
1 tablespoon Soy Sauce
1 teaspoon Ginger
1 teaspoon Garlic Powder
1 cup Italian Seasoned Bread, Crumbs
1 teaspoon Paprika

Mix together Pineapple Juice, Soy Sauce, Ginger and Garlic Powder. In a flat dish mix together bread crumbs and Paprika. Dip pork chops in wet mixture and then coat with bread crumb mixture. Bake on each side for 25 minutes at 325ยบ
