Matterhorn Meatloaf

Matterhorn Meatloaf

Ingredients

1-1/2 lb. ground beef
1-1/2 cups each fresh breadcrumbs; shredded aged Swiss cheese, divided
1 cup milk
1/2 cup each chopped onion, raisins
1 egg
1 tsp. salt
1/4 tsp. pepper
Directions
Heat oven to 350º F. Combine all ingredients except 1/2 cup
cheese; mix lightly. Place mixture in 9×5″ loaf pan. Bake at 350º F.
1 hour 30 minutes. Sprinkle with remaining cheese; return to oven
until cheese melts.
Makes 6-8 servings.

Meat Loaf

Meat Loaf

2 lb. lean ground beef
2 tsp. salt
14 tsp. ground black pepper
2 cups bread crumbs
2 eggs, beaten
1 green bell pepper, chopped
1 cup evaporated milk
Ketchup or Chili Sauce, for topping

Mix meat with seasonings, crumbs, eggs, chopped vegetables and enough evaporated milk to make
a moist mixture.

Pack meat loaf mixture into a loaf pan.

Bake in a preheated 350º F., oven for 60 minutes or until brown.

Note: If ketchup or chili sauce topping is desired, coat top about halfway through baking period.

Makes 6 to 8 servings.

Turkey Meatloaf 

2 pounds ground turkey breast
1 cup quick-cooking oats
1 medium onion, chopped
1/2 cup shredded carrot
1/2 cup skim milk
1 egg or Egg substitute equivalent
2 tablespoons ketchup
1 teaspoon garlic powder
1/4 teaspoon pepper
***TOPPING:*** 

1/4 cup ketchup (sugar free if possible)
1/4 cup quick-cooking oats
In a large bowl, combine the first nine ingredients; mix well.
Press into a 9-in. x 5-in. x 3-in. loaf pan that has been coated with
nonstick cooking spray. Combine topping ingredients; spread over
loaf. Bake, uncovered, at 350 degrees F for 65 minutes or until
juices run clear. 

Diabetic Exchanges: One serving equals 3 very lean meat, 1 starch;
also, 154 calories, 186 mg sodium, 27 mg cholesterol, 11 gm
carbohydrate, 23 gm protein, 2 gm fat.

Pumpkin Meat Loaf

Pumpkin Meat Loaf

1 (3 1/2 to 4 pound) pumpkin
Salt and black pepper, to taste
3 tablespoons prepared yellow mustard
2 tablespoons brown sugar
1 egg
1 tablespoon Worcestershire sauce
1/2 teaspoon salt, or to taste
1 1/2 pounds lean ground beef
1/2 cup fine dry bread crumbs

Cut top from pumpkin; discard top. Remove and discard strings and seeds.
Place whole pumpkin, minus top, in baking dish.
Add about 1 inch hot water to dish around the outside of the pumpkin.
Cover pumpkin and pan with foil. Bake in a preheated 400 degree F oven
for 45 minutes, or until pumpkin is tender but not falling apart.
Pour off water.

Season inside of pumpkin with salt and pepper. Spread with 1 tablespoon of
the mustard and sprinkle with brown sugar.

Combine remaining 2 tablespoons mustard, egg, Worcestershire sauce, salt,
ground beef and bread crumbs. Mix well. Spoon beef mixture into pumpkin
shell, packing down tightly. Return pumpkin to oven and bake, uncovered,
for 45 minutes to 1 hour, or until pumpkin is tender and meat loaf is cooked.

Cut into wedges to serve.

Pot Roast Meat Loaf

Pot Roast Meat Loaf 

1 pound ground beef
2/3 cup evaporated milk
1/3 cup fine dry bread crumbs (or uncooked oatmeal)
1/4 cup ketchup
1 teaspoon salt
2 teaspoons Worcestershire sauce
1/4 teaspoon pepper
3 medium potatoes
3 medum onions
3 medium carrots
2 teaspoons dried parsley flakes
1 teaspoon salt
Dash of pepper 

Mix together beef, evaporated milk, bred crumbs, ketchup, 1 teaspoon salt,
Worcetershire sauce and 1/4 teaspoon pepper. Shape into a loaf in center of
a large sheet of heavy foil and palce in a 13 x 9-inch pan. 

Peel vegetables. Slice potatoes and onions 1/4-inch thick, and cut carrots
into quarters. Place vegetables in layers around the meat, sprinkling each
layer with mixture of parsley flakes, salt and pepper. Cover tightly with foil.
Bake at 375 degrees F for one hour or until vegetables are tender. Uncover
and bake 10 minutes longer to brown meat.
