Tasty Salad

Mixed Field Greens with Toasted Walnuts and a Honey Apple Vinaigrette

Nuts:

1/4 cup Black walnuts

Coarse Salt

Pepper

Toast the Black Walnuts in a nonstick skillet over a low flame sprinkled with salt and pepper. Serve warm on salad.

Dressing:

1/4 cup red wine vinegar

1/2 cup olive oil

1/4 cup applesauce

Honey

Salt and Pepper to taste

Mix all and add only enough honey to bind the dressing.

Assemble salad and garnish with fresh apple slices.

Beau Monde Seasoning (Spice) Recipe

Beau Monde Seasoning (Spice) Recipe

 Ingredients:
1 tablespoon salt
1 tablespoon ground bay leaf
2 tablespoons white pepper
2 tablespoons black pepper
1 teaspoon nutmeg
1 teaspoon cinnamon
1 tablespoon allspice
1 tablespoon mace
1 teaspoon celery seed
1 tablespoon cloves

Instructions:
Mix thoroughly.
Place in an airtight container and store in a cool, dark
place up to 4 months.
Use to season poultry, fish, beef, vegetables, and sauces.
Yield: about 1/2 cup

Cucumber Relish

Cucumber Relish

1 1/2 Quarts cukes
5 large onions
1/2 Cup salt (no iodine)
3 Cups vinegar
1/2 Cup flour
3 1/2 Cup brown sugar
2 Tablespoon turmeric
1 Cup water
1/2 teaspoon black pepper
1 teaspoon powder ginger
1 teaspoon celery seed

Salt chopped cukes & onions in strainer-- 2 hours. Rinse well. Make sauce of other ingredients. Add cukes. Simmer 10 minutes. Pack jars and seal.

Hot Beef Dip

Hot Beef Dip #  2

1  8 oz. cream cheese
2 Tb.s. milk
1/4  cup green peeper
2 Tbsp. dried onions
2 1/2  oz.  dried beef
1/2  tsp .  garlic salt
1/4  tsp.  black pepper
1/2  carton sour cream 

Blend all ingredients , except sour cream .
Blend  with mixer ;  then fold in sour cream with wooden spoon .
Pour into a small baking dish and bake at 350° for 20 minutes .
Top with  1/2  cup chopped pecans that have been coated  with butter and
bake for 10 more minutes  , at same temperature .

BERRY SALAD WITH YOGURT DRESSING

1 cup vanilla yogurt
1/4 cup honey
1 1/2 tablespoons milk (to thin out dressing)
cinnamon and nutmeg to taste
1 1/3 cups Strawberries
1 1/3 cups blueberries
1 1/3 cups raspberries
fresh peppermint leaves, finely chopped   

Wash, stem and sort berries. In a small bowl combine yogurt and honey and
whisk together. Add cinnamon and nutmeg and
whisk until well incorporated. Add milk to thin down. Place berries in serving bowls and drizzle the yogurt dressing over the top. Garnish with mint and serve immediately.

Fat-Free Garlic Wine Marinade

Fat-Free Garlic Wine Marinade 

For Beef or Chicken 

1/2 cup balsamic vinegar
1/4 cup sweet Marsala, sherry,
or sweet white wine
2 Tablespoons fresh lemon juice
2 Tablespoons chopped fresh
oregano or 1 Tablespoon dried
2 Tablespoons chopped fresh
basil or 1 Tablespoon dried
1/4 teaspoon freshly ground
black pepper
4 garlic cloves, minced 

In a medium bowl, combine all ingredients,
mixing well, and set aside until ready to use.
Great marinade for beef or chicken.
