Chicken supreme casserole

2 cups cooked chicken
1 pkg. tortolini
1 pkg. 10 oz. broccoli
1 cup velvetta
3 cups milk
2 tbsp margarine
2 tbsp four

make cream sauce by melting margarine, flour together with 1 1/2 cups
of milk, until slightly thicken. add cheese cubes and the rest of
the milk. let thinken. salt and pepper to taste. add cooked
tortolini until tender, adding cooked broccoli. mix together and
bake at 350 for 30 to 45 minutes.

Southwestern Chicken And Rice

Chicken Tenders or Boneless Skinless Chicken Breasts (boneless, skinless) cut in chunks

1 Cup Thick N’ Chunky Salsa
1 Pkg. Taco Seasoning Mix
About 1/2 cup water
Uncle Ben’s Rice ( I use boil in bag)
1 cup black beans drained and rinsed
1 cup cheese or more(your choice of cheese)

Bring chicken, salsa, taco seasoning and water to boil in large skillet.

Cover and simmer 10 minutes. Add cooked rice and beans. Sprinkle with cheese. Cover and heat again. Top with sour cream.

Serves 4

Mexicali Baked Chicken

Mexicali Baked Chicken

Non stick cooking spray
4 skinless chicken legs ( about 2 pounds )
1/2 c halved slice onion
3 cloves garlic, finely chopped ( I used minced )
1 c sliced cooked potato
1 c vegetable juice cocktail
1/2 c halved sliced green bell pepper
1/2 c drained canned diced tomatoes
1/4 cup 1/3-less-salt chicken broth
2 bay leaves
1 t paprika
1/2 t ground cumin
1/4 t salt
1/4 t ground black pepper

Preheat oven to 325 degrees. Spray large skillet with cooking spray.
Heat over medium heat until hot. Add chicken, onion and garlic. Cook
5 minutes or until chicken in browned,turning occasionally. Add
potato, vegetable juice,bell pepper,tomatoes,chicken broth,bay
leaves,paprika,cumin,salt and black pepper to skillet. Cook 5
minutes, stirring occasionally. Spoon into 1-quart casserole.
Bake, covered, 45 minutes or until chicken is no longer pink. Remove
and discard bay leaves.
