ONE-BOWL BANANA AND WALNUT LOAF

2 cups self raising flour
1 teaspoon bicarbonate soda [ baking soda ]
1 1/2 teaspoons ground cinnamon
2/3 cup caster sugar
1 cup walnuts ,roughly chopped
1 cup milk
2 eggs
2 tablespoons extra light olive oil.
1 cup mashed bananas [ 2 large bananas will do ]

Icing
1 1/2 cups pure icing sugar [ powered sugar ]
2 to 2 1/2 tablespoons lemon juice.
Preheat oven to 180 C. Grease and line a 6 cm deep,10.5cmx 20.5 cm[ base ] loaf pan.
[ 2 1/2 inch deep .4 1/2 x 8 inch base pan ].
Sift flour, soda and cinnamon into a large bowl. Stir in sugar and 2/3 cup walnuts..
Combine milk, eggs, oil and banana in a jug. Add to flour mixture.
Stir gently to combine. Spoon mixture into prepared pan.
Pressing remaining walnuts into top of loaf.
Bake for 50 to 55 minutes or until a skewer inserted into centre comes out clean.
Stand in pan for 10 minutes.Turn onto a wire rack to cool.

To make icing.

Combine icing sugar and enough lemon juice to form a thick paste.
Microwave, uncovered, for 20 seconds on high [ 100% ] power or
until warm and runny. Pour over cooled loaf.
Allow to set before slicing.

3 cups flour
2 cups sugar
1 teaspoon soda
1 teaspoon salt
1 cup chopped nuts
3 eggs
1 & 1/2 cups vegetable oil
2 cups mashed ripe bananas (about 4 large)
1 (8-oz) can crushed pineapple, drained
2 teaspoons vanilla

Combine dry ingredients, stir in nuts.
Combine remaining ingredients: add to dry mixture,
stirring just until batter is moistened.
Spoon into 2 greased and floured 9X5X3-inch loaf pans.
Bake at 350º for 1 hour, or until done.
Cool 10 minutes before removing from pans.

Makes 2 large loaves

NATURAL NO SUGAR WHOLE WHEAT BANANA BREAD

1/6 cup no sugar added applesauce
1/6 cup walnut oil or reg oil
1/2 cup honey
1 teaspoon vanilla extract
2 eggs
1 1/4- 1 1/2 cup mashed very ripe bananas (~ 3-4 bananas)
1 3/4 cups whole wheat pastry flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup hot water
(* 1/2 cup chopped walnuts or pecans if desired)

Preheat oven to 325º
In a large bowl, beat applesauce, oil and honey together.
Add eggs, and mix well.
Stir in bananas and vanilla. Stir in flour and salt.
Add baking soda to hot water, stir to mix, and then add to batter.
(Blend in chopped nuts here if desired) .
Spread batter into a greased 9×5 inch loaf pan.
Bake for 50 to 60 minutes.
Cool on wire rack for 1/2 hour before slicing.

Tips:
* Put browning bananas into the freezer until ready to use
for your recipe.
Makes the bread even more moist!
* May change up the recipe by adding raisins or pumpkin pie spice.
* Make it into 4 mini loaves and bake about 35 minutes.
