Free Recipes – Sugar-free Cinnamon Nut Balls
1-1/4 cups flour
1 tsp. baking powder
1/4 tsp. salt
1/2 cup margarine, softened
3 TBSP granulate sugar replacement
1 egg, beaten
1 tsp. vanilla
2 tsp. cinnamon
1/2 cup finely chopped nuts
1. Preheat oven to 375.
2. Sift together flour, baking powder and salt. Beat margarine,
sugar replacement, egg and vanilla until creamy. Add flour mixture,
stirring to mix completely. Refrigerate for 1 hour.
3. Shape dough into balls and roll each one in mixture of cinnamon
and nuts. Place on ungreased cookie sheets 2 inches apart.
4. Bake for 12 to 15 minutes. Remove from pan immediately. YIELD:
30 cookies.

Sugar Free Fudge

1 Point Per Serving

1/4 cup reduced-calorie margarine

2 ounces unsweetened Chocolate

8 ounces light Cream Cheese — 1 package

24 packets Equal sweetener

1 teaspoon Vanilla extract

1/2 cup chopped walnuts

Melt Margarine over low heat. Add Chocolate and stir just until melted. Remove from heat stir in sweetner and vanilla. Combine chocolate mixture with cream cheese and beat until smooth. Stir in nuts and spread mixture into a lightly greased 8 inch square pan. Refrigerate until firm. Cut into 1 inch squares. Store in Refrigerator.

Makes 64 squares of fudge.

NOTES : Per piece: 18.9 cal, 1.6g fat, 0.2g fibre, 19mg sodium Per piece: 0.47 points Per ( 2 piece ) serving: 0.94 points

NATURAL NO SUGAR WHOLE WHEAT BANANA BREAD

1/6 cup no sugar added applesauce
1/6 cup walnut oil or reg oil
1/2 cup honey
1 teaspoon vanilla extract
2 eggs
1 1/4- 1 1/2 cup mashed very ripe bananas (~ 3-4 bananas)
1 3/4 cups whole wheat pastry flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup hot water
(* 1/2 cup chopped walnuts or pecans if desired)

Preheat oven to 325º
In a large bowl, beat applesauce, oil and honey together.
Add eggs, and mix well.
Stir in bananas and vanilla. Stir in flour and salt.
Add baking soda to hot water, stir to mix, and then add to batter.
(Blend in chopped nuts here if desired) .
Spread batter into a greased 9×5 inch loaf pan.
Bake for 50 to 60 minutes.
Cool on wire rack for 1/2 hour before slicing.

Tips:
* Put browning bananas into the freezer until ready to use
for your recipe.
Makes the bread even more moist!
* May change up the recipe by adding raisins or pumpkin pie spice.
* Make it into 4 mini loaves and bake about 35 minutes.
