 To begin with, we’ve got Chicken RecipesChicken Prosciutto With Mushroom Sauce.

Cue the drool.

For many people, it’s not New Year’s without BLACK-EYED PEAS. And when I say many, I do mean it.

You could have Everything and Nothing’s Stewed Black-Eyed Peas. She’s from Mississippi, so I’ll assume this is a traditional Southern recipe. And do check out the rest of her blog- she must cook like a madwoman.

You could have World-Famous Recipes’New Year’s Eve Black-Eyed Peas, a simple take on a classic. They also have Spicy Black-Eyed Pea Soup for those who’d like a different take on the subject. (By the way, they got mentioned in a New York Times article! (reg-free repost))

And Chicken Recipes thinks you can have your black-eyed peas with chicken. Sounds good to me!

Recipes Recipe submitted Nian Gao- Baked Chinese New Year Cake. Yes, Chinese New Year isn’t for a month or so. But then, I’m not Chinese either, and I betting most of you aren’t, so feel free to use this recipe now!

Citrus and Cottage Cheese Salad

Citrus and Cottage Cheese Salad

2/3 C. nonfat or low-fat cottage cheese
1 tsp. honey
1 1/2 tsp. sliced almonds, lightly toasted and chopped (plus extra
for
garnish)
1 orange, peeled and segmented
1 kiwi, peeled and sliced into rounds

Lightly mix together the cottage cheese, honey and almonds. On a plate or in a shallow bowl, arrange a layer of fruit and top with a spoonful of cottage cheese mixture. Repeat one more layer. Garnish with extra almonds.

Variation: You can substitute an 8 oz. container of prepared citrus
segments for the fresh fruit. Makes 1 serving.

Low Carb Jerky

Low Carb Jerky

3lbs lean round steak (all fat and silver skin removed)
Marinade: 4tbls reduced sodium salt (atkins gives me cramps this salt has potas)
1tsp onion powder
1tsp garlic
1tsp chili powder
1tsp pepper
1tsp cayanne
3 dashes liquid smoke
1/2 cup water

Procedure:

mix the spices and the smoke and water let sit Slice the beef in 1/4 inch thick slices.
Pour marinade over the meat and mix it up.
Make sure it is all covered evenly.
 Let marinate at least 1 hour

Place meat in dehydrator. As you stack the trays sprinkle pepper on the meat.
Set to 155 degrees and dont check for 4 hours. It can take up to ten hours.

Its nitrate free!!!! Sugar Free.
