Not your ordinary chicken!</p>
<p>Serves 8</p>
<p>Ingredients:</p>
<p>3-1/2 pounds skinned chicken, cut up<br />

<p>Saut&eacute; chicken in oil in large nonstick skillet, turning often until golden brown on all sides, about 12 minutes. </p>
<p>Add onion, green pepper and garlic, then saut&eacute; 2 minutes longer. Add tomato, jalapeno, saffron, stock and bay leaf.</p>
<p>Bring to a boil, cover and simmer 10 minutes. Add plums and rice, heat.</p>
<p>Serve with extra plum wedges, if desired.</p>

<h3 class="promo" />It was the year the people took back the food. Expertise was out: the Food Network edged aside chefs like Mario Batali to make room for home-cooking queens like Paula Deen, Sandra Lee and Rachael Ray. The most popular new food magazines and cookbooks were collections of recipes from real home cooks (or those who pretended to be), often stamped with the irresistible words “home-style,” “country” and “everyday.”  </p>
<p>And one of the Web’s most popular independent food blogs, according to data collected by Alexa, a Web information company, was an undiscriminating one titled World Famous Recipes. Bill Austin of Scottsdale, Ariz., collects recipes and recipe links at <a href="http://famousrecipes.wordpress.com/" target="_"><font color="#666699"><strong>famousrecipes.wordpress.com</strong></font></a>, presenting them unedited and without comment. The site’s motto: “Famous and not so famous recipes — who are you to decide? Who am I to decide?”</p>
<p>Today’s home cooks want to decide for themselves, or learn from others like them.</p>
<p>“When you have the Internet, who needs cookbooks?” said Amy Cisneros, an avid cook from San Antonio. “I look at all the different recipes, and then I make it my way.”</p>

<p>For the flan:<br />

<p>1. Preheat the oven to 350&deg;F. </p>
<p>For the caramel base: </p>
<p>1. Melt sugar with water in a small copper or heavy-gauged saucepan over moderate heat. Stir occasionally to melt sugar. </p>
<p>2. Let the mixture boil without stirring for at least 5 minutes until the liquid turns golden brown. </p>
<p>3. Immediately pour into a 9&#8243; baking dish. </p>
<p>For the flan: </p>
<p>1. Mix the pumpkin, evaporated milk, egg substitute and vanilla in a bowl by hand or mixer. </p>
<p>2. Add the dry ingredients and blend well. </p>
<p>3. Pour the mixture into the prepared baking dish. </p>
<p>4. Place the dish in a larger pan and pour hot water into the larger pan until the water comes halfway up the edge of the baking dish. </p>
<p>5. Bake for 1 hour or until the flan is set. </p>
<p>6. Cool until room temperature then refrigerate for at least 4 hours and up to 1 day before serving. </p>
<p>7. Before serving run a sharp knife around the edge of the flan and invert onto a platter making sure that the caramel runs down the top and sides. </p>
<p>Serving Size: 1/10th</p>
