Famous Winter Pesto Pasta with Shrimp Recipe

Winter Pesto Pasta with Shrimp

12oz fettuccine, uncooked
1 cup chopped fresh kale, stems removed
2 cloves garlic, halved
1/4 cup grated parmesan cheese
1/8 tsp salt
1 cup plain non fat yoghurt
1 tsp vegetable oil
1 lb medium shrimp, peeled and deveined
1 medium red bell pepper, cut into bite sized pieces

Prepare pasta according to package directions.  While pasta is
cooking, puree kale, basil, garlic, parmesan cheese and salt in food
processor until smooth.  Stir in ypghurt.  Place oil in large
skillet.  Saute shrimp and red bell pepper in skillet over medium low
heat for 4 min or until shrimp is bright pink and cooked through.
When pasta is done, drain well and transfer to serving bowl.  Add kale
mixture and toss well.  Add shrimp and bell pepper, tossing gently.

Famous Cider Glazed Sweet Potatoes with Cranberries Recipe

Cider Glazed Sweet Potatoes with Cranberries

2 large sweet potatoes, peeled and cut into 1″ chunks
1 1/2 cups apple cider or juice
1/4 cup packed golden brown sugar
2 tbs butter
1/2 tsp ground nutmeg
1/2 tsp ground allspice
1/2 cup dried cranberries

Boil sweet potatoes in large pot of salted water until halfway cooked
(when knife weill encounter resistance), about 5min.  Drain and
cool.  Combine cider, sugar, butter, nutmeg and allspice in large
nonstick skillet over medium high heat.  Bring to a boil, stirring
often.  Add potatoes and reduce heat so liquid is simmering.  Cook
5min, stirring occasionally.  Add cranberries and continue cooking
until all liquid is reduced to a syrup glaze and potatoes are
tender, about 10min.  When potatoes are tender, transfer to serving
bowl with slotted spoon.  Season to taste with salt and pepper.
Pour remaainig glaze over sweet potatoes and serve.

Famous Holiday Hush Puppies Recipe

Hush Puppies

Ingredients
1 cup cornmeal
1/4 cup all-purpose flour
2 teaspoons sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg, beaten
1/2 cup buttermilk or sour milk (see tip, page 000)
1/4 cup sliced green onions (2)
Shortening or cooking oil for deep-fat frying

Directions
1. In a medium bowl stir together cornmeal, flour, sugar, baking powder,
baking soda, and salt. Make a well in center of flour mixture; set
aside.

2. In another bowl combine egg, buttermilk, and green onions. Add egg
mixture all at once to flour mixture. Stir just until moistened (batter
should be lumpy).

3. Drop batter by tablespoons into deep, hot fat (375 degrees F). Fry
about 3 minutes or until golden, turning once. Drain on paper towels.
Serve warm. Makes 14 to 18 hush puppies

Raspberry Muffins with Streusel Topping

Ingredients
1-1/2 cups (350 ml) flour
1/2 cup (125 ml) sugar
2 tsp (10 ml). baking powder
1/2 cup (125 ml) milk
1/2 cup (125 ml) butter, melted
1 large egg beaten
1 cup (225 ml) raspberries frozen or fresh
Topping:
1/4 cup (60 ml) pecans, chopped
1/4 cup (60 ml) brown sugar, packed
1/4 cup (60 ml) flour
2 tbsp (30 ml) butter, melted

Preheat oven to 350 degrees (175 C.).
In a large mixing bowl combine flour, sugar, and baking powder, set aside.
In another bowl, beat together milk, cooled melted butter and egg.
Add wet mixture to the bowl with the flour mixture, blend until just mixed, do not overwork.
Spoon about 1 tbsp (15 ml) of batter into prepared muffin cups.
Divide half the raspberries among the muffin tin’s cups and top each with remaining batter, then add the remaining raspberries.
For the topping combine pecans, sugar, flour, and butter and sprinkle over batter.
Bake at 350 degrees (175 C.) for 20-25 minutes, or until lightly browning and a toothpick comes out free of batter, be careful to not overcook.

Thanksgiving Recipe – Rich Chocolate Pumpkin Truffles

RICH CHOCOLATE PUMPKIN TRUFFLES
Yield: 48 servings

2 1/2 c Vanilla wafers, crushed
1 c Almonds, toasted & ground
1/2 c Powdered sugar, sifted
2 ts Cinnamon
6 oz Chocolate chips (semi-sweet)
1/2 c Libby’s Pumpkin (canned)
1/3 c Coffee liqueur
1/4 c Powdered sugar, sifted

*Note: Apple juice may be substituted for coffee liqueur if desired.

In medium bowl, combine vanilla wafer crumbs, ground almonds, the 1/2 cup powdered sugar, and cinnamon. Blend in chocolate, pumpkin, and coffee liqueur. Form into 1-inch balls. Chill. Dust with remaining powdered sugar just before serving.

Paula Deen’s Thanksgiving Southern Cornbread Stuffing

Paula Deen’s Thanksgiving Southern Cornbread Stuffing
Prep Time: 30 minutes
Cook Time: 1 hour 20 minutes

Yield: 6 to 8 servings

Cornbread, recipe follows
7 slices oven-dried white bread
1 sleeve saltine crackers
2 cups celery, chopped
1 large onion, chopped
8 tablespoons butter
7 cups chicken stock
1 teaspoon salt
Freshly ground black pepper
1 teaspoon sage (optional)
1 tablespoon poultry seasoning (optional)
5 eggs, beaten   Preheat oven to 350 degrees F.
In a large bowl, combine crumbled cornbread, dried white bread slices, and saltines, and mix together and set aside.
In a large skillet, saute the chopped celery and onion in butter until transparent, approximately 5 to 10 minutes. Pour Sauteed mixture over cornbread mixture. Add the stock, mix well, taste, and add salt, pepper to taste, sage, and poultry seasoning, and mix well. Add beaten eggs and mix well. Reserve 2 heaping tablespoons of this mixture for the giblet gravy. Pour mixture into a greased pan and bake until dressing is done, about 45 minutes. Serve with turkey as a side dish.
Cornbread:
1 cup self-rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs
2 tablespoons vegetable oil   Preheat oven to 350 degrees F.
Combine all ingredients and mix well. Pour batter into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool. To serve, cut into desired squares and serve with butter. Yield: 6 to 8 servings

3-Bean Casserole

Three types of canned beans–pork and beans, butter beans, and chili beans in chili gravy–are combined with sliced frankfurters in a sweet and tangy brown sugar and vinegar mixture to create a three bean casserole.

Ingredients:

• 1 pound frankfurters, sliced  
• 1 can pork and beans in tomato sauce  
• 1 can butter beans. drained  
• 1 can chili beans
• 1/4 teaspoon oregano  
• 1/2 cup brown sugar  
• 1 small onion, chopped  
• 2 tablespoons vinegar

Method:

Combine all ingredients. Turn into casserole. Bake casserole, uncovered, in 350 degree oven until heated through.

Notes:

This is a quick and easy way to have a bean dish that tastes like it has been simmered for hours. Great for potlucks or picnics. Delicious.

Cajun Catfish

Cajun Catfish

1/2 cup butter, melted

Cajun seasoning to taste

7 (9 ounce) catfish fillets

Brush bottom of broiler pan with some of the melted butter. Sprinkle Cajun seasoning moderately over butter. Place fish fillets into the seasoned pan.

With a sharp knife, make 4 to 5 cuts in each fillet; the cuts should be 1/2 to 1 inch. Brush fillets with more butter. Place under broiler and broil 8-10 minutes or until almost done. Add more Cajun seasoning to fish in broiler then broil another 3-5 minutes or until fillets flake easily with fork and start to brown on top.

Makes 7 servings

Fruit Dip – Creamy Blueberry Dip

Creamy Blueberry Dip

2 cups blueberries
1/3 cup light cream cheese (1/3 of an 8-ounce block)
1 Tablespoon apricot preserves

In processor, mix blueberries, light cream cheese and apricot
preserves; blend until smooth.

Serve with cut up fruit.

Makes 8 servings

Donna’s Seafood Casserole:

Donna’s Seafood Cassarole:

1-1/2 lbs large scallops-drained
1 can tiny shrimps- drained
1/2 onion
1/4 lb bacon
1-1/2 c milk
1/4 c butter
1/2 sleeve Ritz crackers
Swiss cheese- 3 slices
cornstarch
garlic powder
salt
black pepper

Dice onion and bacon- sauté till cooked. When cooked toss in scallops and shrimp. Mix 1 cup milk and butter in saucepan- heat on low till hot. Take approx. 3 tbs cornstarch and mix with remaining cold milk till blended. Slowly pour cold milk- cornstarch mixture into hot milk & butter-
Season with garlic powder, salt and pepper to taste (whatever other seasonings you like)
stir till blended and thickened.

Pour fish mixture into greased casserole dish. Lay slices of swiss cheese over fish. Pour white sauce over top of swiss cheese. Crumbled up in your hands 1/2 sleeve of Ritz crackers. Spread evenly over top of casserole.

Bake at 350 for 1/2 hour.
