<p>Crust<br />

<p>Grease a 9&#215;13-inch baking pan. Heat oven to 350 degrees.<br />
In a food processor or with pastry blender, work crust ingredients<br />
together just until it begin to stick together a bit. Press into<br />
prepared pan. Bake for 12 to 15 minutes, or until lightly browned<br />
around edge. </p>
<p>Let cool slightly in pan on a rack.</p>
<p>Prepare fruit filling. Mix preserves and cherries; spread over crust.</p>
<p>Make the cream cheese filling. In a mixing bowl, beat cream cheese<br />
until light. Beat in sugar and eggs and flavoring until well blended.<br />
Spread over the cherry layer. Bake for 25 to 30 minutes.</p>

1/4 cup butter &#8212; melted<br />
Filling:<br />
3 8 ounce packages cream cheese &#8212; softened<br />

Topping:<br />
1/2 cup semisweet chocolate chips<br />
1 1/2 teaspoons shortening<br />
1/2 cup coarsely chopped pecans &#8212; toasted<br />
2 tablespoons caramel ice cream topping</p>
<p>In a bowl, combine the cookie crumbs and butter. Press onto the bottom of a greased 9&#8243; springform pan; set aside. In a large mixing bowl, beat cream cheese, sugars and vanilla until smooth. Beat in milk and flour. Add eggs and egg yolk, beating on low speed just until combined. Pour into crust.</p>
<p>Place on a baking sheet.</p>
<p>Bake at 325 degrees for 45 to 50 minutes or until center is almost set.</p>
<p>Cool on wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Cover and refrigerate for at least 6 hours or overnight.</p>
<p>Remove side of pan. In a microwave melt chocolate chips and shortening stir until smooth. Top the cheesecake with pecans; drizzle with chocolate mixture and Caramel topping&#8217; </p>
<p>Refrigerate leftovers.</p>

<p>Ingredients<br />
Crust</p>
<p>1/2 cup       slivered almonds<br />
15          vanilla wafer cookies<br />
1 tbsp.   unsalted butter or margarine, melted<br />
Cheesecake<br />
2 pkg.          (8 oz. each) cream cheese, softened<br />
2 pkg.          (8 oz. each) mascarpone cheese, softened<br />
1-1/3 cups   sugar<br />
2 tsp.    vanilla extract<br />
4            eggs<br />
6 oz.     each bittersweet chocolate, white chocolate; melted, cooled, </p>
<p>Glaze<br />
8 oz.     bittersweet chocolate, chopped<br />
3/4 cup       unsalted butter or margarine<br />
1-1/2 tbsp.  light corn syrup</p>
<p>Directions</p>
<p>Heat oven to 325&deg; F.  Place almonds in food processor; pulse until chopped.  Add wafers and melted butter; process until finely crumbled.  Press into bottom of 9&#8243; springform pan.  Wrap outside of pan with foil.  Almonds and wafer cookies can be chopped by hand and crust mixed in a bowl.</p>
<p>Place cream cheese, mascarpone cheese and sugar in large bowl; beat at medium speed until smooth.  Beat in vanilla.  At low speed, beat in eggs, one at a time, until well-blended.  Divide cheese mixture evenly between 2 medium bowls.  Add melted bittersweet chocolate to one; stir to combine.  Add white chocolate to second bowl; stir to combine.  Pour white chocolate mixture into pan.  Gently spoon and spread bittersweet chocolate mixture over white chocolate mixture.  Place pan in large shallow roasting pan or broiler pan; fill roasting pan with 1&#8243; hot water.</p>
<p>Bake 1 hour or until edges are puffed and top looks dull and is dry to touch.  Center should move slightly when side of pan is tapped.  Turn off oven.  Let cheesecake stand in oven 1 hour.  Cool to room temperature; refrigerate overnight.  </p>
<p>To make glaze, place bittersweet chocolate and butter in medium saucepan.  Heat over medium heat until melted, stirring occasionally.  Remove from heat; gently stir in corn syrup until mixture is smooth<br />
and slightly warm to the touch (about 80&deg;F.).  </p>
<p>Remove sides from springform pan; place cheesecake on wire rack placed over baking sheet.  Pour glaze over cheesecake, spreading with spatula.  Refrigerate until set.  Store in refrigerator. Makes 16 servings.</p>
<p>Nutritional Info Per Serving:  590 calories, 46.5 g total fat (27 g<br />
saturated fat), 8.5 g protein, 42 g carbohydrate, 145 mg cholesterol,<br />
180 mg sodium, 3 g fiber.</p>

<p>2/3 C finely crushed tortilla chips, any flavor<br />

1/2 C green onions, finely chopped<br />
1/2 C sliced pitted ripe olives<br />
1 &#8211; 2 avocadoes, sliced, put a few drops of lemon on them to prevent<br />
browning.</p>
<p>Combine the tortilla chips and margarine and press the mixture onto<br />
the bottom of a 9&#8243; spring pan. Bake for 15 minutes.<br />
Place the cottage cheese in a blender, food processor or mixer and<br />
beat until smooth. Combine the cottage cheese and cream cheese,<br />
mixing a medium speed until well blended. Add the eggs, one at a time<br />
and mix between additions. Blend in the cheddar cheese and chiles.<br />
Pour the mixture over the baked crust. Return the pan to the oven and<br />
bake for 1 hour @325F.</p>
<p>Combine the sour cream or option and Knorr or chicken consomme and<br />
mix thoroughly. Spread the mixture over the hot cheesecake; return to<br />
the oven and continue baking for another 10 minutes. Remove from the<br />
oven and let cool slightly. Loosen the cake from the rim of the pan;<br />
cool completely before removing the rim. Refrigerate the cheesecake<br />
until ready to serve.</p>
<p>Top with the tomatoes, chives, olives and avocadoes.<br />
I put the olives in the middle and arrange the avocado slices,<br />
tomatoes and chives in a pinwheel fashion, but be creative and do<br />
whatever suits your fancy.</p>

<p>                1 cup graham cracker crumbs<br />
                 3 Tablespoons Margarine (Parkay, recommended.), melted</p>
<p>                  16 ounces cream cheese, softened<br />
                  1/2 cup sugar<br />
                  1 Tablespoon lemon juice<br />
                   1 teaspoon lemon peel*<br />
                   1/2 teaspoon vanilla<br />
                    2 eggs, separated</p>
<p>Combine crumbs and melted margarine; press onto bottom of 9 inch Spring<br />
Form pan. Bake for 10 minutes at 350. </p>
<p>  Combine cream cheese, sugar, juice, peel and vanilla mixing at medium speed<br />
of electric mixer until well blended. Add egg yolks, 1 at a time, mixing well<br />
after each addition. Fold in stiffly beaten egg whites; pour over crust. Bake<br />
at 300 degrees f; for 45 minutes. Loosen cake from rim of pan&#8217; cool prior to<br />
removing rim of pan. Chill. Servings with fresh fruit or cherry pie filling,<br />
if desired.</p>
<p> 10-12 servings.</p>

1 6-ounce graham cracker pie crust Fresh strawberry halves<br />
Whole fresh blueberries<br />
Instructions:<br />
Beat cream cheese, sugar and lemon juice in large bowl<br />
with electric mixer on medium speed until blended well.<br />
Gently stir in 2 cups whipped topping.<br />
Spoon into crust. Refrigerate 3 hours or until set.<br />
Spread remaining whipped topping over cheesecake.<br />
Arrange strawberries and blueberries in rows on top of<br />
cheesecake to resemble flag. (Or, arrange fruit in other<br />
desired design on top of cheesecake.)<br />
Store leftover cheesecake in refrigerator.</p>
