Cherokee Casserole
1 pound ground beef
1 T. oil
1/2 cup onions, chopped
1 1/2 t. salt
1/8 t. pepper
1/8 t. garlic powder
1/8 t. thyme
1/8 t. oregano
1 small bay leaf
1 can (20 oz.) crushed tomatoes
1 can (10 oz.) condensed cream of mushroom soup
1 cup rice, pre-cooked
Cheddar cheese, grated
Brown the ground beef in the oil over high heat. Add chopped onions
& reduce heat to medium; cook until tender. Stir in salt, pepper,
garlic powder, thyme, oregano, bay leaf, crushed tomatoes, mushroom
soup, and rice. Bring all to a boil; reduce heat and simmer 5
minutes, stirring occasionally. Discard bay leaf. Spoon into a 1 &
1/2 qt. casserole dish. Sprinkle cheese over top of the casserole.
Broil just until cheese melts.
Cheesy Franks-N-Beans Casserole

9 slices bacon -- crisp
32 ozs pork and beans
1/4 c brown sugar
2 tbsps Dijon-style mustard
3 tbsps worcestershire sauce
8 frankfurters
8 slices processed American cheese -- cut in strips
Combine Beans, brown sugar, mustard and worcestershire sauce, mix
well. Slit franks lengthwise, arrange 4 strips cheese in each. Pour
half of bean mixture into 1 1/2 qt. baking dish, arrage 4 franks on
top of beans. Place 3 slices bacon between franks. Repeat, arrange
remaining 3 slices bacon on top of franks. Bake 30-40 min, or arrange
in crockpot and heat on low for 8 hours..
Beef Nacho Casserole

1 lb Ground beef
12 oz Chunky salsa (1 jar)
1 c Sweet corn
3/4 c Mircale Whip(R)
1 tb Chili powder
2 c Tortilla chips (crushed)
2 c Colby/Monterey Jack cheese
1. Heat oven to 350øF. Brown meat; drain. Stir in salsa, corn, Miracle Whip(R)
and chili powder. 2. Layer 1/2 meat mixture, chips and cheese in 2-quart casserole.
Repeat layers. 3. Bake 20 minutes or until thoroughly heated. Top with shredded
lettuce and chopped tomato, if desired.
BAKED SPAGHETTI CASSEROLE

3 oz Potato
3 oz Spaghetti, cooked
3 oz Tomato -- chopped medium fine
1 1/2 oz Scallions -- chopped med fine
1 1/2 oz Sesame seeds
1 1/2 tb Sesame oil
1/4 ts Thyme
1/4 ts Garlic -- minced
1/2 ts Salt
Preheat oven to 400 degrees. Lightly grease 4 x 8
baking pan with sesame o8il. Bake potato for 40
minutes. When cooled, cut into 1/2-inch cubes. Combine
all ingredients together. Lower heat to 375 degrees.
Transfer to a baking pan and bake for 15 minutes.
Serves 2.
BAKED BEAN CASSEROLE
2 sl Bacon
16 oz Old fashioned baked beans
In molasses & brown sugar
Sauce, canned
2 T Minced onion
2 T Catsup
1 t Prepared mustard
2 T Brown sugar
1. Place bacon on a paper-towel-lined paper plate. Heat, covered
with paper
toweling, 3 minutes or until crisp.
2. In a deep, 1 1/2-quart, heat-resistant, non-metallic casserole
combine
beans, onion, catsup, mustard and brown sugar. Mix thoroughly.
3. Crumble bacon and sprinkle over baked bean mixture.
4. Heat, uncovered, in Microwave Oven 10 minutes or until sauce is
bubbly.
Variation: Add 6 franks or 4 slices ( 1/2-inch thick) ham and heat
an additional 2 minutes in Step 4.
Au Gratin Potatoes And Ham

3 C potatoes -- peeled and sliced
1/2 Med onion -- coarsely chopped
3/4 C ham -- cooked, cubed
1/2 C american cheese -- shredded
1/2 Can cream of mushroom soup
1/4 C milk
1 Dash thyme
In slow cooker, layer half each of the potatoes, onion, ham and cheese;
repeat layers. In small bowl, combine soup, milk and thyme; pour over
top. Cover; cook on high setting for 1 hour. Reduce to low setting;
cook for 6 to 8 hours or until potatoes are tender.
Hot Dog Casserole Recipe
Hot Dog Casserole
Ingredients:
2 cups Macaroni
1 tablespoon Margarine
8 Hot dogs
1/2 cup Chopped onion
1 (12 oz) can mexican style corn
1 (15 oz) can tomato sauce
1/2 teaspoon Chili powder
1 cup American cheese (diced)
Directions:
Cook 2 cups macaroni according to package directions and drain.
Melt butter in pan. Add sliced hot dogs and onion chopped. Cook
until lightly browned. Add corn (undrained) tomato sauce and chili
powder. Simmer 10 minutes. Add cooked macaroni and cheese. Bake in
casserole dish in 350 oven for 20-30 minutes.
Easy Burrito Casserole
1 to 1 1/2 pounds ground beef (can use ground turkey)
1 can cream chicken soup
1 cup salsa (can use rotel tomatoes w/chili peppers)
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon garlic powder
salt & pepper to taste
3 to 4 flour tortillas
1 package shredded cheese, Mexican blend or cheddar
corn tortilla chips
Brown ground beef in large skillet. Drain & rinse beef and return to skillet
Add soup, salsa, & seasonings. Stir & simmer until thoroughly mixed
Spray a casserole dish with a non-stick cooking spray. Place a small
amount of the beef mixture on the bottom of the casserole. Quickly
dip a flour tortilla into warm water and place on top of beef.
Continue layering beef, cheese, flour tortilla, etc. ending with
cheese. Place a couple of handfuls of crumbled corn tortilla chips on
top.
Bake at 350º for 20 to 30 minutes or until top begins to brown and
casserole is bubbly
Serve with sour cream, salsa, shredded lettuce, & chopped tomato
Hints:
If you like it hot, add sliced jalapenos to the beef mixture or just
layer them in.
You can substitute the cream of chicken soup for cream of mushroom.
All of the seasoning can be increased or decreased according to taste.
Italian Shells Casserole
Italian Shells Casserole
2 pounds medium-size shells
1 teaspoon salt
16 ounces sour cream
16 ounces provolone cheese, sliced
2 pounds ground beef
2 to 3 quarts spaghetti sauce (your own or pre-made)
1/2 teaspoon pepper
24 to 32 ounces shredded mozzarella cheese
Cook shells. Rinse, drain and set aside.
Brown ground beef. Add salt, pepper and spaghetti sauce. Simmer for 20
minutes.
Spray deep lasagna pan or large casserole dish with nonstick spray. Line
with half of the shells. Cover shells with half the meat sauce. Spread half
the sour cream over it and cover with half of both cheeses. Repeat for the
second layer. Cover with lid or foil and bake at 350 degrees F for 40
minutes.
Uncover and bake 20 minutes more.
Serve hot.
