Famous Almond Streusel Apple Pie

Almond Streusel Apple Pie

Pastry

1 one-crust flaky pastry
Filling
1/2 cup sugar
2 tbsp. all-purpose flour
1/2 tsp. ground cinnamon
1/8 tsp. salt
1/4 tsp. almond extract
7 cups thinly sliced peeled apples (7 medium)
Streusel
1/2 cup each all-purpose flour, packed brown sugar, sliced almonds
1/4 cup firm butter or margarine, cut into pieces
Directions
Place sheet of foil on oven rack below rack pie will be baked
on to catch any drips. Heat oven to 425ยบ F. Make one-crust flaky
pastry. Bake 4 – 5 minutes or until pastry is dry. Filling: In large
bowl, mix all ingredients except apples. Stir in apples until coated.
Spoon into partially-baked crust. Streusel: In small bowl, mix all
ingredients except almonds with pastry blender or fork until crumbly.
Sprinkle over apples. Bake 35 – 45 minutes, covering entire surface
of pie with sheet of foil for last 15 – 20 minutes of baking to
prevent excessive browning. Bake until apples are tender and juice is
bubbly. Sprinkle with almonds. Bake uncovered 2 – 3 minutes longer
or until almonds are toasted. Cool completely, about 1 hour.
Makes 8 servings.
