Vegetable Recipes

BOILED SPANISH ONIONS

Boil Spanish onions in salted water thirty
minutes. Drain and add butter or drippings, salt and pepper, covering
the pan to prevent steam from escaping. Cook slowly for about three
hours, basting frequently with drippings. Care should be taken that they
do not burn.

3-Bean Casserole

Three types of canned beans–pork and beans, butter beans, and chili beans in chili gravy–are combined with sliced frankfurters in a sweet and tangy brown sugar and vinegar mixture to create a three bean casserole.

Ingredients:

• 1 pound frankfurters, sliced  
• 1 can pork and beans in tomato sauce  
• 1 can butter beans. drained  
• 1 can chili beans
• 1/4 teaspoon oregano  
• 1/2 cup brown sugar  
• 1 small onion, chopped  
• 2 tablespoons vinegar

Method:

Combine all ingredients. Turn into casserole. Bake casserole, uncovered, in 350 degree oven until heated through.

Notes:

This is a quick and easy way to have a bean dish that tastes like it has been simmered for hours. Great for potlucks or picnics. Delicious.

PIE CRUST. MRS. ELIZA DICKERSON.

With one cup of flour, use one tablespoonful of lard, and a little

salt; cut the lard into the flour with a knife; use just enough cold

water to stick it together; handle as little as possible. If wanted

richer, add some butter when rolling out.

Stir in one cup of drawn butter, the yolks of two eggs (well beaten),

pepper and salt, and a few sprigs of parsley. Let it boil. Pour over

fish when ready to serve.

STANLEY PUDDING

1 pint Milk

2 oz. Flour—2d.

1 oz. Sugar—1d.

2 Eggs—2d.

2 spoonful Jam—1d.

Total Cost—6d.

Time—One Hour.

Put the milk into a saucepan, mix the flour with a little cold milk; and when the milk in the saucepan is nearly boiling, stir it in, and let it boil up. Pour into a basin and beat in the yolks of the eggs and the sugar; turn into a pie dish and bake till firm. Spread a spoonful of jam on the top; whip the whites of the eggs to a stiff froth and spread them over, sprinkle with sugar, and put back in the oven to set. Serve cold.

OYSTERS A LA POULETTE

One quart oysters, four level tablespoons
butter, four level tablespoons flour, one-half level teaspoon salt,
one-fourth level teaspoon celery salt, one-half cup oysters liquor, one
cup each of chicken stock and milk, juice one-half lemon. Look over the
oysters, heat quickly to the boiling point, then drain and strain the
liquor through cheesecloth. Melt the butter, add the flour, salt and
celery salt, and when blended add the oyster liquor, chicken stock and
milk, stirring until thick and smooth. Cook for five minutes, then add
the oysters and lemon juice, and serve at once.

Cooking Meats - Steak - Pork - Lamb and Other Meat

BEEF OLIVES

2 lbs. Rump Steak—10d.

1/4 lb. Veal Seasoning—2d.

12 Peppercorns

1/2 pint Stock

1 Onion

1 Carrot—1/2d.

Total Cost—1s. O1/2 d.

Time—One Hour and a Quarter

Cut up the steak into thin slices about three inches long and two broad, shape the seasoning into small corks, roll a piece up in each slice of steak, thread them on a skewer and lay them in a saucepan. Pour in the stock, add the peppercorns and vegetables, bring to the boil, simmer very gently for one hour and a half. Place the olives on a hot dish and draw out the skewers, remove the fat, boil up the gravy, season and flavour to taste, and pour round. Serve hot.

POTATO CAKE

Two cups of white sugar, one cup of butter, one cup of hot mashed
potatoes, one cup of chopped walnuts, half a cup of sweet milk, two cups
of flour, four eggs well beaten, five teaspoonfuls of melted chocolate,
one tablespoonful each of cloves, cinnamon and nutmeg, two teaspoonfuls
of baking powder. Bake in layers and use marshmallow filling.

Pie and Pastry Recipes

CHERRY DUMPLINGS

Sift two cups of pastry flour with four level
teaspoons of baking powder and a saltspoon of salt. Mix with
three-quarters cup of milk or enough to make a soft dough. Butter some
cups well, put a tablespoon of dough in each, then a large tablespoon of
stoned cherries and another tablespoon of dough. Set in a steamer or set
the cups in a pan of hot water and into the oven to cook half an hour.
Serve with a sweet liquid sauce.
