Red-and-Green Beans
Ingredients
2 pounds fresh green beans, trimmed and cut diagonally in half
2 tablespoons plus 1 teaspoon butter
1/3 cup sliced almonds
1 small clove garlic, minced
1/2 cup bottled roasted red peppers, cut into strips
1 teaspoon Asian dark sesame oil
3/4 teaspoon salt
1/4 teaspoon black pepper
Directions
1. Cook beans in large pot of lightly salted boiling water just until
crisp-tender, 4 to 5 minutes. Drain; rinse under cold water.
2. Heat 1 teaspoon butter in skillet over medium heat. Add almonds; toss
until golden, 2 minutes. Turn out onto plate.
3. Heat remaining 2 tablespoons butter in skillet. Add garlic; saut¿ 1
minute. Add beans; toss to heat. Add red peppers, sesame oil, salt and
pepper; stir. Transfer to serving dish. Top with almonds. Makes 8
servings.
