World Famous Recipes – Baked Salmon with Spinach and Tomatoes

Baked Salmon Spinach and Tomatoes

Prep Time: 10 min | Total Time: 35 min
4 salmon fillets (4 oz. each)
2 cups chopped fresh spinach
1 cup sliced mushrooms
1 medium tomato, chopped
1/3 cup Kraft Special Collection Sun-Dried Tomato Vinaigrette Dressing

PLACE salmon fillets, skin sides down, in 13×9-inch baking dish sprayed with no stick cooking spray.
MIX remaining ingredients until well blended; spoon over salmon.
BAKE at 375°F for 20 to 25 minutes or until salmon flakes easily when tested with fork.
Makes: 4 servings

Appetizer Recipes – Cocktail Meatballs Appetizers Recipe

Ingredients:
1 Pound ground beef
1/2 c Dry bread crumbs
1/4 c Milk
1/2 ts Salt
1/2 ts Worcestershire sauce
1/4 ts Pepper
1 sm Onion, chopped
(about 1/4 cup)
1 Egg
1 tb Chopped fresh parsley
1 Bottle (12 ounces) chili sau
1 Jars (10 ounces) grape jelly

Instructions:

These were first featured in our 1956 Betty Crocker’s Picture Cook.
Prepare Meatballs – except add parsley before mixing ingredients and
shape into 1-inch balls.
Cook meatballs in 12-inch skillet over medium heat about 15 minutes,
turning occasionally, until brown.
Remove meatballs from skillet; drain.
Heat chili sauce and jelly in skillet, stirring constantly, until
jelly is melted.
Add meatballs and stir until coated.
Simmer uncovered 30 minutes.
Serve hot with wooden picks.
ABOUT 5 DOZEN APPETIZERS; 40 CALORIES PER APPETIZER.
To Microwave: Prepare Meatballs – except add parsley before mixing
ingredients and shape into 1-inch balls.
Arrange half of the meatballs in microwavable pie plate, 9 X 1-1/4
inches.
Cover loosely and microwave on high 6 to 8 minutes, rearrangi
meatballs after 4 minutes, until no longer pink inside.
Let stand 3 minutes; drain.
Repeat with remaining meatballs.
Mix 1/2 cup chili sauce and 1/2 cup grape jelly in 2-quart
microwavable casserole.
Cover tightly and microwave on high 3 minutes or until jelly is
melted.
Stir in meatballs.
Cover tightly and microwave 2 to 4 minutes longer or until meatballs
are hot.
When pressed for time, use meatballs that you have made ahead and
frozen (just be sure they are thawed before you start the recipe).
You can also make these meatballs with ground turkey for a delicious,
lower-fat change.

2/3 C finely crushed tortilla chips, any flavor
2 T margarine, melted
1 C cottage cheese
(3) 8 oz. packages of cream cheese
4 eggs
10 oz. shredded sharp cheddar cheese
(1) 8 oz. container of sour cream
(1) 4 oz. can chopped green chiles, ortega or jalapeno
1 tsp Knorr Suiza or chicken consomme (base)
1 C chopped tomatoes
1/2 C green onions, finely chopped
1/2 C sliced pitted ripe olives
1 – 2 avocadoes, sliced, put a few drops of lemon on them to prevent
browning.

Combine the tortilla chips and margarine and press the mixture onto
the bottom of a 9″ spring pan. Bake for 15 minutes.
Place the cottage cheese in a blender, food processor or mixer and
beat until smooth. Combine the cottage cheese and cream cheese,
mixing a medium speed until well blended. Add the eggs, one at a time
and mix between additions. Blend in the cheddar cheese and chiles.
Pour the mixture over the baked crust. Return the pan to the oven and
bake for 1 hour @325F.

Combine the sour cream or option and Knorr or chicken consomme and
mix thoroughly. Spread the mixture over the hot cheesecake; return to
the oven and continue baking for another 10 minutes. Remove from the
oven and let cool slightly. Loosen the cake from the rim of the pan;
cool completely before removing the rim. Refrigerate the cheesecake
until ready to serve.

Top with the tomatoes, chives, olives and avocadoes.
I put the olives in the middle and arrange the avocado slices,
tomatoes and chives in a pinwheel fashion, but be creative and do
whatever suits your fancy.

8-10 slices bacon, crispy cooked and crumbled
3-4 Roma (plum) tomatoes, seeded and chopped (about 1 1/3 cup)
1 cup chopped leafy green lettuce
2 tablespoons chopped fresh basil leaves
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon ground pepper
Approximately 1/3 cup olive oil
1/2 package (16-oz.) twin French bread loaves, cut in 1/4-inch slices

In medium bowl, stir together all topping ingredients; set aside.
Brush olive oil on both sides of bread slices; place on baking sheet.
Bake at 400 degrees F., turning once, for 7 minutes per side or until
crisp and golden brown; cool. Spoon about 1 tablespoon topping on
each toast round. * Makes about 24 appetizers. – * Or, serve topping
in a small bowl, surrounded by the toast rounds. — Tailgate Tip:
Prepare and refrigerate topping ingredients and bake toast rounds
ahead of time. For best flavor, stir together topping ingredients
just before serving.

ingredients for 12 servings:
1/2 c Butter or Margarine
1 ea Med. Clove Garlic *
1 ea Env. Soup Mix **
16 oz (1 Can) Tomato Puree
1/2 c Brown Sugar
1/4 c White Vinegar
1/4 c Chili Sauce
5 lb Spareribs ****

Preparation: * Garlic Clove should be finely chopped. ** You can use
the following soup mixes in this recipe: Onion, Onion- *** For best
Taste use the Imported Soy sauce. Domestic can be used but ****
Country style spareribs can be used, but baby back ribs are the best.

—– Preheat oven to 375 degrees F. In large saucepan, melt butter
and cook garlic with onion recipe soup mix over medium heat until
garlic is golden. Stir in tomato puree, sugar, soy sauce, vinegar and
chil sauce. Bring to a boil, then simmer, stirring occasionally, 15
minutes. Meanwhile,in large aluminium foil-lined baking pan or
broiler rack, arrange spareribs, meaty side up, and bake 20 minutes.
Brush spareribs generously with sauce, then continue baking, meaty
side up, brushing occasionally with remaining sauce, 50 minutes, or
untl spareribs are done. Makes about 12 Appetizer or 7 main dish
servings.

Yield: 1 Servings

3 lg Idaho Potatoes, peeled and
-diced
2 tb Corn starch
2 Whole eggs
4 Egg whites
1/4 c Heavy cream
-Salt and pepper to taste
1 tb Lemon juice
1/4 c Creme fraiche or sour
-cream
6 lg Slices of smoked salmon
1 4- ounce jar of osetra
-caviar (optional)
-dill sprigs for garnish

Cook three large, peeled and diced potatoes in salted water When
cooked, pass potatoes through a food mill or sieve with fine holes.
Place puree in electric mixer with a paddle attachment. Add corn
starch to mix thoroughly. Slowly incorporate eggs and egg whites,
then heavy cream. Season with salt and pepper to taste. Meanwhile,
in
a small bowl, stir the lemon juice into the creme fraiche. Set
aside.
Preheat non-stick skillet over medium heat. Spoon the pancake
mixture
into skillet, keeping a round shape (s ilver dollar size). Cook for
90 seconds, then turn and cook until done. Place pancakes on plate
and serve with one slice of smoked salmon, one tablespoon of the
reserved creme fraiche mixture and a heaping teaspoon of caviar.
Garnish with dill and serve.

(Makes 6 appetizer servings)

Ingredients

1 beaten egg
3/4 cup soft bread crumbs (1 slice)
1/3 cup dried tart red cherries or dried cranberries, finely snipped
1/4 cup finely chopped green onions
1/4 teaspoon pepper
1/2 pound lean ground cooked ham
1/2 pound lean ground beef
2/3 cup red currant jelly
2 tablespoons prepared mustard
Green onion slivers

Directions:

1. Combine egg, bread crumbs, cherries or cranberries, chopped green
onions, and pepper in a mixing bowl. Add ground ham and ground beef;
mix well. Shape into 1-inch balls.
2. Place in a 15×10x1-inch baking pan. Bake in a 350 degree F oven
for 15 to 18 minutes or until done. Drain, if necessary.
3. Meanwhile, heat jelly and mustard together in a chafing dish,
blazer pan, or small skillet, stirring occasionally until jelly is
melted. Add ham balls to chafing dish. (Or, transfer ham balls to a
warm heatproof serving bowl and pour glaze over ham balls.) Keep
warm. Garnish with green onion slivers. Makes 48 meatballs (48
appetizer servings).

12 slices Saint Louis Bread slices (suggestions:
tomato-basil, sourdough, or French loaves), sliced thin
8 ounces cream cheese softened
4 ounces blue cheese, crumbled
3 tablespoons minced green onion or
1 tablespoon chopped fresh chives
1/3 cup melted butter or margarine

Optional: Before rolling bread, add a thin layer of shaved ham.

Mix together the cream cheese, blue cheese, green onion or chives.
Trim crusts from bread. Roll each bread slice with a rolling pin to
flatten. Spread one side of each piece of bread with 2 tablespoons
cream cheese mixture. Roll up tightly. Brush with the melted butter.
At this point you may freeze unbaked rollups 3-4 weeks in an airtight
container. Thaw in refrigerator before baking. Bake rollups at 400
degrees F for 10 to 12 minutes.

Serves 12.

Ingredients

6 (6 inch) fajita-size flour tortillas
1 16 oz.can ORTEGA? Refried Beans
1/2 cup ORTEGA? Medium Taco Sauce
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup sliced (about 3) green onions
1/4 teaspoon crushed red pepper
2 cups (8 ounces) 4 cheese Mexican blend

Directions

PREHEAT oven to 400? F. Place tortillas on baking sheet(s).

BAKE for 3 to 4 minutes or until crisp.

SPREAD refried beans evenly on tortillas. Spread 1 tablespoon taco
sauce over beans. Top with bell peppers, green onions and crushed red
pepper. Sprinkle with cheese.

BAKE for 7 to 8 minutes or until cheese is melted. Cut into wedges.
