Scottish Shortbread

Scottish Shortbread

Lots of variations to this recipe exist. Some are round cookies, some spiced,
but this one is a really rich recipie cooked in a round sponge sandwich cake
tin.

8oz white flour
6oz butter
5 oz sugar
2 oz ground almonds

Place ingredients into a mixing bowl and just rub the butter in

Place mixture in 2 sponge sandwich tins and just work it into the edge with
knuckles until combined and smooth.

Prick with a fork

Cook at 325 F for 20 minutes or when golden brown and bubbling

Leave to cool then mark out portions before completely cold.

Hope everyone had a Happy Thanksgiving

It is time to send in your ideas for leftovers.

We had quite a feast here yesterday and hope you all had a wonderful time and great food. We cooked a 22 pound turkey and had six of the grandkids over along with their parents.

I am cooking up the carcass to make soup right now.

My recipe for that is the same as for Chicken Soup but it takes a much larger stock pot.

I made a homemade relish tray with baby summer squash (yellow and green), snow peas, baby carrots, radishes, and green onions.

Green Bean Casserole
Candied Yams
Mashed Potatoes
Turkey gravy
Brown and serve rolls
Cornbread Dressing / Stuffing
Deviled Eggs
Seven Layer Dip / Chips
Pecan Pie
Apple Pie
Pumpkin Pie

The most eventful item of the day was when my wife asked my son-in-law to move the turkey in the oven. He left a pot holder in there and it caught on fire and burned to a crisp.

Lancashire Lamb Hot Pot

Lancashire Lamb Hot Pot

A traditional dish from NW England (Manchester and surrounding area.) This is
very warming on cold snowy days. It is not heavily seasoned but relies on the
taste of the meat and garden herbs.

3tbs vegetable oil
2lb boned cubed lamb
12oz roughly chopped onion
2 large carrots peeled and diced
2 sticks celery chopped
2lbs potatoes peeled and sliced to 1/4 in
2oz pearl barley
1 pint(20oz) lamb or beef boullion
2tsp dried rosemary)
2 tsp dried thyme) adjust to taste
2 tsp dried marjoram)
worcester sauce
salt and pepper

Heat oil in large pan and brown the meat then drain on kitchen paper

Saute onions until well browned then add carrots and celery for further 2
mins

Stir in boullion, herbs, seasoning and worcester sauce.

Replace meat and bring to the boil.

Place a half meat mixture in oven proof dish

Add a layer of potatoes

Repeat, ending with a topping of potatoes

Cover and cook for 2 - 2 1/2 hours on 325 F or 170 C

Remove lid for last 30 mins to brown the potatoes on top,

Abuelo’s Cilantro Lime Soup

Abuelo’s Cilantro Lime Soup

Serves 8 to 12

1 whole chicken, cut up
1 1/2 gallons water
1 tablespoon chicken base

Remove skin and wings from chicken; cover with water and add chicken
base. Cook chicken over medium heat for approximately 1 1/2 hours.

Remove chicken and let cool; bone chicken and chop meat into small
pieces. Save broth.

1 tablespoon canola oil
3/4 cup diced onion
3/4 cup minced tomato
1/2 tablespoon minced garlic
1 teaspoon oregano
1/2 tablespoon chile powder
1/2 tablespoon salt
1/2 tablespoon finely chopped hot chiles
3/4 cup corn
2 cups chopped chicken
1/2 gallon reserved chicken broth
1/2 teaspoon chicken base
7 ounces white hominy, drained
1 1/2 tablespoons fresh lime juice
1/2 bunch fresh cilantro, chopped into 1/4-inch pieces

Place canola oil in pan and heat. Add onion, tomato, garlic, oregano,
chile powder, salt and chiles and sauté until onions are translucent.
Add corn, chicken, broth, chicken base and hominy. Bring to a boil
and cook for 15 minutes. Add lime juice and remove from heat. Add
chopped cilantro.

Nutritional analysis per serving, based on 8 servings: 151 calories,
4 grams fat, 8 grams carbohydrates, 23 grams protein, 30 milligrams
cholesterol, 976 milligrams sodium, 21 percent of calories from fat

Ice cream in a baggie

Ice cream in a baggie

This is an easy and fun way to make ice cream. Be sure
to round up some friends to help shake the baggies and
share the delicious frozen treat!

Measure 1 cup of milk (whole or 2% works best) or
cream and carefully pour into sandwich size zippered
plastic bag.
Add 1 ½ tablespoons of sugar and ½ teaspoon of vanilla
to milk in plastic bag. Make sure bag is tightly sealed!
Place 5 cups of ice cubes into gallon size zippered
plastic bag.
Add ¼ cup of table salt to ice in plastic bag.
Place sealed bag of milk mixture in bag of ice and
tightly seal ice bag.
Gently shake ice bag for about three to five minutes.
Remove ice cream bag from ice bag, wiping off salt
from outside of bag.
Enjoy vanilla ice cream right from the bag or spoon
into bowls or cones.
Bag can be placed in freezer for several hours if
harder ice cream is desired.

Here are some fun ideas to flavor your ice cream:

Make chocolate ice cream by adding chocolate syrup
or using chocolate milk!
· Chocolate ice cream quickly becomes Rocky Road by
adding marshmallows and nuts.
· All different kinds of fruit flavors of ice cream
can be made by adding fresh, frozen or canned fruit.
Try strawberry, peach, banana or a wild new
combination - RazzleBlueBerryBanana Swirl!
· Bits of your favorite cookies or candy can be
stirred into your ice cream to concoct your own
favorite flavor!
· If mom or dad would like mocha ice cream, dissolve
some instant coffee in the milk before shaking.

Luby’s Hawiian Pie

Ingredients:
1/3 C. Butter
1 1/2 C. Sugar
3 Eggs
2 Tbsp. Flour
2 Tbsp. Cornmeal
1 1/4 C. drained, canned, crushed Pineapple
1 1/4 C. Coconut
1 tsp. Vanilla
1 unbaked 9-inch Pie Shell

Preparation:
Heat oven to 350 degrees. In medium bowl, beat together butter,
sugar, eggs, flour, and cornmeal until well blended. Add pineapple,
coconut, and vanilla. Mix well. Pour into pie shell.
Bake 45 minutes or until wooden pick insterted in center comes out
almost clean.

ave and Buster’s Muffaletta Salad

Dave and Buster’s Muffaletta Salad

1 1/4 pounds Romanelli pasta
4 ounces sliced turkey
4 ounces sliced ham
2 ounces (24 slices) pepperoni
2 ounces sliced salami
1/4 cup sliced black olives
1/2 cup chopped green salad olives
1 cup sliced celery
3 tablespoons Italian dressing
12 ounces prepared assorted lettuce
2 ounces julienned spinach leaves
1 cup diced Roma tomatoes
1 cup assorted pizza cheeses: fontina, mozzarella, asiago or parmesan
4 tablespoons chopped green onion
1 cup roasted red pepper1/4 cup shredded aged asiago cheese

Julienne (cut in strips) the pepperoni, salami, ham, and turkey then
place in salad bowl.

Cut celery, green onions and roast peppers, add to the bowl.

Chop and add both types of olives and add to bowl.

Add the Italian dressing and pesto and toss all together well to mix.

Cook pasta in boiling salted water until done, drain and place in
salad bowl. Pour the Italian dressing on the pasta and toss all
together gently.

Place assorted lettuce, spinach, pizza cheeses, diced ripe Roma
tomatoes and onions on cold platter (leave a space in the middle for
pasta).

Add tossed hot Romanelli salad mixture; pile high in the center of
platter. Add shredded asiago or parmesan to garnish.

Servings: 4
