Recipes - DATE AND CHOCOLATE FILO PARCELS
1 cup pitted dates. finely chopped
2 tablespoons apple juice
100g / 3 1/2 oz dark chocolate, grated
1/2 cup ground almonds
1 tablespoon brown sugar
12 sheets filo pastry
canola oil spray
cinnamon sugar.
Preheat oven to 180c lightly grease a flat baking tray.
Place dates and apple juice into pan and stir over
medium heat for 2-3 minutes.
Allow to cool. Add chocolate, almonds and sugar.
Working with one sheet of filo at a time, lay the filo
flat and spray lightly
with canola oil. Sprinkle with cinnamon sugar and fold in
half to make a rectangle.
Shape a large tablespoon of the filling into a log and
place one end of the pastry.
Fold the pastry over to enclose, fold in the edges and roll up.
Place on a baking tray. repeat with remaining pastry and filling.
Spray lightly with canola spray and bake for 10-15 minutes
or until crisp.
Serve sprinkled with cinnamon sugar.
